After a childhood of mushy boiled broccoli i was convinced it was my least favorite vegetable and then I tried it roasted in college and fell in love immediately 🥰 its the only way i cook broccoli now, even for salads!

I recently started roasting broccoli, cauliflower, carrots - all so delicious roasted. I use avocado oil and sprinkle with some dried herbs like basil and Italian herb blend. Turns out so tasty.

Yes I hated broccoli as a kid now roasted, air fried or even sautéed are the only ways I eat them now. That boiled stuff is for the old birds lol
I am changing my diet around to eat less meat only twice out of the week and she did it for me. She is onto something when she said that the best way to get someone to eat something is a good sauce. Everything looks amazing and I love how she explains how to save the nutrients even after it goes through the cooking process.
Nice to see dry mustard being used more. I love it. When my broccoli gets overcooked, I smash and bake it like smashed potatoes.

There is an enzyme that isnt heat-resistant that is also found mustard powder since cruciferous veg have been created through cultivation. The enzyme is availabile in mustard powder, wasabi, horse radish. You sprinkle some on, and it binds to the receptors in the cooked broccoli and cancer-fighting compound is created.

Steam or semi par boil salted then slow bake in oil butter . ❤ All left overs into simple Clear vege herb broth, unsalted better. 🎉

Broccoli is super high in oxalates and boiling reduces the oxalate content.

You still need to use these tricks to restore the sulforaphane as boiling destroys the enzyme too. YOu can boil it for this recipe if you prefer.

Dr Michael Gregor says in his book, How not to Die, adding a small amount of uncooked cruciferous to cooked adds to the nutrients. Green or red cabbage, horseradish, or even black pepper works.

Dont forget to cook the broccoli for a minute before baking it... otherwise the roots taste like hard bamboo and the greens are black like cancer

I love roasted broc & have avoided it for a while now due to calcium degradation with this method. I'm intrigued. I forget the details but certain compounds are released over time. It's like a defense mechanism for the plant once it's been cut. The class I took also mentioned adding mustard seed

Chopping it in smaller pieces or after cooking it and a little mustard powder results in increased release of Sulforaphane which has anti-cancer effects.Without chopping and or adding mustard powder will not give adequate sulforaphane for health benefits.

350 is the healthiest temp for oven cooking, especially for vegetables. 400 and above kills off enzymes and nutrients. Period. Adding back is folly. Please.

Thanks but heated oil has no place in our bodies. This is not a healthy way of preparing this. It might be tasty. Everything with oil usually is.😢
