Ingredients
5 Pounds lamb leg
2 Pounds of Beef cheek
10 chiles guajillos (Save 4 cups of Chile water for blending : )
2 dried chipotle peppers or chipotles in adobo sauce
6 Cups water
1 roasted onion
4 roasted tomatoes
8 roasted garlic cloves
6 bay leaves
1 1/2 Tbsp allspice
1 Tbsp instant decaf coffee
1 Tbsp Marjoram
1 Tbsp Mexican oregano
1/2 Tbsp ginger powder
1/2 Tbsp ground cumin
1/2 Tbsp black pepper
3 Tbsp coarse sea salt (+ 3 Tbsp Chicken bouillon: adjust to taste : )
1/2 Block of Ibarra chocolate
1/2 cup Pineapple vinegar (or Apple cider vinegar)
Optional- 2 Pounds of beef bone- 6 Carrots for added flavor- 3oz of Tequila
Birria quesa tacos
Birria
Corn tortillas
Melty cheese such as: Mozzarella, queso Chihuahua, Oaxaca, or asadero just make sure it melts : )
Onions, chopped
Cilantro chopped
Limes
Tip❣️
WATER 💦 Make sure to cover the lamb with enough water for a delicious broth. You will need 10 to 13 cups in total.

I am forever baffled by anyone who makes negative comments about this channel and others. When I do see nonsense and offensive posting it just makes me sad thinking these people have a bad life and are hurting. Pray for them. I’ve only seen it once here so I hope negatively is deleted by our ladies. These women are masters of the universe when it comes to testing recipes.

So I’m here in Saudi Arabia, with Birria Taco & Quesadilla being best seller in my restaurant and a window to the flavors of Mexico. First time I saw marinating the meat overnight and we will try it ❤. I have a suggestion for you, try it with a pressure cooker.

Salam Aleikum, thank you for selling our beautiful food in your country. Originally it’s done with goat and lamb, you can also do it with beef. Hmmm, I wonder what it would taste like if you marinated camel meat in this. Give it a try and let us know. She cooks so good.

I've cooked for over 50 years for my children and grandchildren, friends, neighbors and anyone who would accept the food I made and prayed over. I didn't need to be thanked, I would tell them to thank Him. Our Father loves us all and He says to have a cheerful heart and, in all things, be grateful. It seems like every holiday, I make a nice meal, and sometimes I get a mood of bittersweetness. All the original leaves from my family tree have fallen-Grandparents, Aunts and Uncles, Parents, all 4 brothers and my only sister went home.Three weeks ago, even my big guy Beauregarde went home. He was a 10 year old English Mastiff. I miss him so much.I walked around for two weeks crying and being snippy to people until I remembered how sick he was and how much pain he was in...at that point I started rejoicing. I am so blessed to have experienced so much of The Father's love in my life in so many ways!! The greatest of all love is when Jesus died for me on the cross at Calvary. 💙 I don't know who said what to you, but when people are mean and say hurtful things, just say, "I love you and there's nothing you can do about it.". You are not less than me and I am not greater than you. You are loved.
I’ve never made Birria, and I found out last year that my son likes it. Both my kids asked why I never made it. “Well, your grandparents had ten kids & that might have been a luxury meat/meal back in the day (1950’s).” I really had never heard of it. Okay, follow up to my post the other day. I marinated the meat for 24 hours, cooked everything up and despite not having lamb and using beef, ohhhhhh myyyyyy goodnesssss, words cannot describe how savory, how mouthwatering, how absolutely delicious these tacos are. This recipe is easy, so packed full of flavor and abundant where you can feed a few or a large amount of people. My family is asking when I am going to make them again. lol They asked after they were full and asked again this morning. Huge hit! Thank you Steph and Cloud, every recipe of yours I have tried is perfection. EDIT: Oh, and I added the carrots. Soooo delicious.

It’s been almost a year since I heard your voice and it makes me cry.. my mom watched you everyday and cooked all your recipes but she passed away in May of 2022.

Unfortunately I cannot find lamb anywhere, so I am using beef, but I gathered all my ingredients and am ready to go in the kitchen right now and start this recipe. My mouth is watering. lol I will let the meat marinate 24 hours instead of 4, so I won't be able to report back until tomorrow. I can't wait to try these, omg! My second time making this recipe and it is FANTASTIC. I used a beef brisket and added the beef bones and it just comes out so good. It makes so much extra broth and it's easy to freeze. I've used the leftover consomme for chicken tortilla soup and for birria ground beef chili - almost as good as the first night's quesabirria tacos! Thank you for sharing this with the world.

This looks muy delicioso! I think you've convinced me I can make birria and my family will like it. Last year at Easter I made my first adobo from scratch (with dried guajillo and ancho chiles) and put it on a leg of lamb that I slow smoked on the bbq. My family loved that and there's so much similar flavors in this. Thanks for sharing! I grew up in South Texas, but birria is something I've only learned about in the past couple of years.
