🧀特濃忌廉腐乳大蝦意粉Creamy Fermented Bean Curd Prawn Spaghetti🦐
材料及份量(2人份):
📌順發孖記玫瑰腐乳(Fermented Bean Curd) 2磚
📌意粉(Pasta) 150克
📌大蝦(Prawns) 10隻
📌洋蔥(onion) ¼個
📌蒜蓉(Minced Garlic) 2湯匙
📌無鹽牛油(Unsalted Butter) 15克
📌淡忌廉(Cream) 150毫升
📌鹽(Salt) 適量
📌黑胡椒(Black Pepper) 適量
📌檸檬(Lemon) 半個
📌芫荽(Coriander)少許
📌歐芹碎(Chopped Parsley) 適量
做法:
①將蒜頭切碎,再將¼個洋蔥切碎備用
②蝦剪去腳、觸鬚和去腸,然後吸乾水份,用小火溶化牛油,再把蝦的每邊煎60秒,再拿起備用
③熱鍋加水煮沸,熱水下鹽煮意粉約8分鐘至al dente
④然後準備一碗冰水,再將意粉「過冷河」
⑤將2磚腐乳輕輕壓碎備用
⑥熱鑊下牛油再爆香洋蔥和蒜蓉約2分鐘,再加入腐乳炒勻
⑦倒入淡忌廉和意粉並攪拌均勻,再轉細火煮2分鐘,亦可加入蝦略炒一下
⑧下少許黑椒和鹽調味,上碟並放上大蝦擺盤
⑨灑上芫荽碎裝飾,然後擠入少許檸檬汁,再灑上歐芹碎和黑胡椒即可享用
🧀Creamy Bean Curd Prawn Spaghetti🦐
Ingredients and portions (for 2 people):
📌 Fermented Bean Curd 2 bricks
📌Pasta 150g
📌10 prawns
📌Onion ¼ piece
📌Minced Garlic 2 tablespoons
📌Unsalted Butter 15g
📌Light Cream (Cream) 150ml
📌Salt (Salt) appropriate amount
📌Black Pepper (Black Pepper) appropriate amount
📌Half lemon
📌A little Coriander
📌Chopped Parsley (appropriate amount)
STEP:
① Chop the garlic, then chop ¼ onion and set aside
② Cut off the legs, tentacles and intestines of the shrimp, then drain the water, melt the butter over low heat, and fry each side of the shrimp for 60 seconds, then pick it up and set aside
③ Add water to a hot pot and bring to a boil. Add salt to the hot water and cook the pasta for about 8 minutes until al dente.
④Then prepare a bowl of ice water, and then "cross the cold river"
⑤Gently crush 2 bricks of fermented bean curd and set aside
⑥ Heat the butter in a wok and sauté the onions and garlic for about 2 minutes, then add the fermented bean curd and stir-fry evenly
⑦Pour in light cream and spaghetti and stir evenly, then turn to low heat and simmer for 2 minutes. You can also add shrimp and stir-fry briefly.
⑧Add a little black pepper and salt to taste, place on a plate and top with prawns
⑨Sprinkle with chopped coriander for garnish, then squeeze in a little lemon juice, then sprinkle with chopped parsley and black pepper and enjoy.
