• Ingredients: sweet potato bread.
Sourdough: High-protein flour 100 grams, 0:32, Yeast 2 grams, 0:36, Water 100 grams, 0:43,
Sweet potato 1100 grams(after being steamed and peeled) 1:17,
Whipping cream 200 grams, 1:24,
High-protein flour 200 grams, 2:13,
Rye flour 50 grams, 2:17,
Yeast 2 grams, 2:22,
Powdered milk 20 grams, 2:25,
White granular sugar 40 grams, 2:42,
Egg one(about 60 grams) 2:47,
Water 60 grams 2:49,
Salt 1 gram, 3:13,
Butter 25 grams, 3:18,
• Baking temperature: preheat the oven to upper heat 180 degrees and bottom heat 160 degree. Keep it in middle layer of oven and bake it for about 18 mins. If we can't change the temperatures separately, bake it with upper heat and bottom heat 170 degrees. This bread is quite big, for a small oven, we need to reduce the temperatures by a bit.

    你好,之前有请教肉餡的调法(希望除了葱姜,没有大料,花椒什么的)也请教了如何可以使包子有面香,現多了一个请教,如果是面粉水1:1加一点酵母粉,混合入冰箱一个晚上冷藏,第二天拿出再揉入乾面粉,這方法做出的包子面胚是否香,又有口感,非常感谢可以再教大葱包子時可以回復,期待!
