Braised pork rice (Chinese:卤肉饭; pinyin: lǔròufàn) is a popular rice dish commonly available throughout Taiwan. While the flavor of this dish may vary from one region to the other, the basic ingredients remain similar such as minced pork, soya sauce and served on steamed rice. This dish is so easy to cook and technically you can just prepare this one dish and your meal is settled.

Ingredients:
Serves 5 - 6
500g of pork belly
1-2 tablespoons of cooking oil
70g of shallots - chopped
2 cloves of garlic - chopped
8 pieces of dried mushrooms - diced
1 teaspoon of five spice powder
A few dashes of white pepper
1/2 cup of white rice wine
1/3 cup of low sodium light soya sauce
1/3 cup of premium dark soya sauce
15g of rock sugar
700ml of chicken stock
4 hard boiled eggs - optional

    i tried several 卤肉饭 mostly the gravy turned into oil after cool down. But this, its heaven, I couldn't believe that I could actually made such good 卤肉饭, even better than some stalls!

    Why is the title "Chinese" when in the video you say it's a "Taiwanese" dish. Please try not to offend Taiwanese by calling it Chinese in the title. Taiwan is not communist, is self-governed, and is a seperate entity if China.

    @@mfsdmer9665 not sure if the title was changed recently or if it was always that way and I had missed it prior. But they did clarify that it is "Taiwanese style" so that clears things up. It's like calling something "dumplings"....well there are so many different kinds. Which style? American, Italian, Chinese, which province of China's style, Japanese, Taiwanese, Korean? Etc.

    azn Smazn In Vietnam we also cook braised porkbelly our own style, but we call it Chinese Pork because the original recipe is from a 5000 years old homogenous culture called Chinese.

    I've tried out some of your recipes, and all turns out really great! Thanks. For this recipe i tried it with minced pork, sadly it didn't turn out as oily as I expected, but the taste was great! I substitute the white rice wine with Cognac! Yummy!

    Just tried this. Tastes great. I just switched the rice wine to xo liquor since that's all I have. And I added a teaspoon of corn starch mix with water in the end as personal living for the thicker sauce. :D do make more simple dishes like this so I can prep in advance for my wife as I travel alot

    Lovely... making this today 👌Actually the trick to extra fragrant 卤肉饭 is after frying the meat, add in lots of golden browned shallots and oil (prepared ahead) before simmering the meat for a couple of hours.

    Can no problem but if possible, go for the fattier cut so that the pork remains juicer after you’ve cooked them.

    Is there a difference between using dry mushrooms that you've rehydrated and using normal 'fresh' mushrooms diced?

    Hihi. The bite of fresh shitake mushrooms is very different from that of dried mushrooms. The latter is chewier which adds more texture to the dish. Also if you’re using fresh, please reduce the amount of water added during cooking as fresh mushrooms release more liquid as you cook them.

    差不多因为材料大概一样。不过米糕饭是用糯米煮的。而且为什么叫米糕就是因为它应该像蛋糕的原理。做法大概和糯米鸡相似。

    Hi Roland and Jamie, I tried this recipe just now. The flavour is very good. I don't have Rice Wine so I just washed the pork belly with some salt to get rid of any porky funky smell. My only problem is my pork is not as tender as I thought it would be (the melt in the mouth type). I used 300gm pork belly and braised for 30 mins. Can you please tell me why is that so, please?     Hi Chef, I would like to cook for a friend who doesn’t eat pork. Do you think minced chicken will do too ? As for the dark soy sauce, I it’s not the dark sweet sauce right ? Thanks for sharing and it really looked delish!!

    Hi Anna. So sorry for our late reply. Yes absolutely. You can replace pork with chicken. Ya it’s not dark sweet sauce. It’s dark soy sauce. Please go for premium dark soy sauce so that it won’t make your dish too salty. Happy cooking!

    Hi Jamie and Roland, Can I make this dish and freeze them up? If yes, for how long and what's the best way to freeze them? I'm going for a long holiday and would like to prepare them into smaller food containers so my mom can just remove them individually and heat them up when she wants to. Please advice. Thank you.

    Hi Elvira. Can you can prepare them beforehand. Cool them down and then freeze them in individual portion. When your mom wants to eat them, she just need to cook the rice as usual, remove a pack of pork from the freezer to defrost. Once the rice is done, put the defrost pork in a bowl and add the bowl into the rice cooker and steam using the rice cooker keep warm function to heat the pork up. We figured you just need about 10 mins to warm the pork up. Once frozen, you can keep them for months. Hope this helps.

    Hi Chef Roland. May I know if Chinese rice wine is similar to Xiao Xing Wine? Or could you let me know what alternative can I use to replace Chinese rice wine? Would love to try this recipe but don’t have the rice wine

    Hi Alice. You can use mirin but skip the sugar because mirin is quite sweet. You can also use sake. The purpose of the wine is to remove any funky taste from the pork. Chinese rice wine is different from shao Xing wine

    Hihi yes it will. I would love to go for lean pork but Roland loves pork belly. In Taiwan, they use pork belly too but to me, the sauce itself is enough to make this dish yummy.

    is this flavor similar to Din Tai Fung's 'minced pork noodles' the sauce they use there? Or this this a total different flavor? I'm always on the hunt for a certain flavor.. I had in Houston Texas, at a restaurant called Cafe 101 and they serve a dish called "Meat sauce over white rice with tea marinated egg." and it's this amazing minced pork, really saucy and almost like a gravy type consistency and over the white rice it's such a dream-- but i can never find another person cooking it close to the Houston restaurant you come 80% closest to it, but i'm wondering if what i'm talking about is even the same thing? if you know, please let me know. the dish was mainly sweet and savory with more of a sweet flavor hint in it.

    Awesome. Glad you enjoyed this recipe. We don’t recommend you to cook the pork first. If you’re worried about the porky taste, white rice wine will help ease that.

    Hi! Every time I make pork belly, it is so greasy! After watching you video, I'm surprised that while you were stir frying the PB, it didn't get very greasy. Do you have any tips? Is it the cut of the pork belly or a certain cooking technique I missed....?

    Maria Wongso Maria Wongso I tried it with Shaoxing cooking wine. But If I remember correctly, I was using little bit less then half a cup. Really liked it :) just give it a try

    I had forgotten that my dark soy sauce is salty by itself and used the same 1/3 cup of it along with the light soy sauce. But it still tastes good! Im gonna try again next time with some adjustments!

    Hi Lilian, so sorry for our late reply. It doesn't matter if you wait for the white rice wine to evaporate because at the end of the cooking process, the alcohol would have evaporated. Hope this helps. Thank you so much for watching our video :))

    Hi Roland, if I were to feed 8 pax, I’m going to upsize the meat from 500g to 700g. What about the ingredients like soya sauce, white wine and sugar? Do I need to up the amount too?
