STIR FRY Sauce For Everything | BASE Sauce For MEAT | NOODLES | RICE
Here's our base stir fry sauce that we use in the restaurant, you can use it by itself for noodles meats and veggies to save time at home. Or you can add extra ingredients such as chilli and basil for gaprow. Just 3 or 4 Tbsp will make every dish taste amazing.
Here's the recipe:
300ml Oyster sauce
100ml Thin soy sauce
3 Tbsp Sweet soya sauce
4 Heaped Tbsp Coriander, garlic, and black pepper mixture prepared in the pestle and mortar ( check out our chicken wing video for how to do this)
• THAI chicken WINGS fri...
1 Large Tbsp Palm sugar
100ml water
some vegetable oil
As with all Asian cooking this is a rough guide with regards to amounts, adjust for your own taste and spice tolerance.
If you want to make it spicier then toast birds eye chillies instead of large sweet chilli.

Looks good, I’ll have to give it a try. The Thai Maekrua brand of oyster sauce is what I use for my Asian cooking, though my recipe developed after tweaking recipes of marinading/noodle/stir fry sauces for East and Southeast Asian dishes has more of a Chinese flavor profile that can be modified with kecap manis (sweet, dark Indonesian soy sauce) and sambal terasi added to be suitable from Malaysian/Indonesian dishes. The basic ingredients are sesame oil, Chinese black vinegar, shaoxing rice wine, superior light soy sauce, dark soy sauce and oyster sauce. For marinading, oil and tapioca starch plus a drizzle of water is added.

Going to try it in a couple of hours, have been looking for a decent base sauce for my stir fry. Edit a day later , I made it and it’s fantastic and stored in the fridge for next time I make a stir fry . It’s going to be used a lot in my house the way it sticks to the broccoli and other veg is so nice 👍

Tried this today, and was very good. We added Galangal and Chinese Five Spice, and then replaced the Coriander Roots with it's stems instead (a lot of it!!). Also replaced Water with home made Chicken Stock, and added some aged Dark Vinegar. This will definitely be a go-to for us!! Thank you.

Difficult to find that's why for a lot of recipes we have to use the stem of the plant. Otherwise grow some 😉
So if you’re doing a stir fry, at what point do you add this. From the first? Having cooked the stir fry, into the wok? Or in a bowl to add after serving?

Hi John, you can either use it as a marinade for your protein and then add a bit of water, or you can add it directly to the wok once your protein is almost cooked.

I have been unable to find Coriander root anywhere, and I live in Seattle a pretty big city. None of the Asian or even specific SouthEast Asian markets carry it. What can I use as substitute, will powder coriander root spice work?

You can use coriander stems and the leaves as a substitute, the flavour won't be as strong but it will still taste great. In the UK you can find it in asian supermarkets but it's expensive.

Me too! The great thing about this sauce is that it's your base sauce, then depending on the dish you're making you would add different ingredients such as Chilli, lemongrass, ginger etc. Enjoy and thanks for the suggestion.

@@dickfitzwelliner2807 I'm talking about the root. Not the stems. I know it's near impossible to find in Asian stores, but so is lime leaf. I think it's just a very low in demand product basically only used in authentic Thai cooking, ie green curry. It's taste is totally different from the rest of the plant. It's awesome!

You certainly can give it a go, it might thicken up when in the fridge, leave out for 10/15 minutes and it should become more workable.

Yes, absolutely, in fact coconut sugar has more nutrients, is healthier and is less processed than palm sugar. If you don't have either if these you could use brown or white sugar just use it sparingly.

@cherylforfang8671 coconut sugar is fine and is actually better for you so is coconut oil. I also prefer coconut oil, but unfortunately, it's not financially viable in a restaurant. In fact we used coconut oil in our latest video that will be released on Tuesday. Thanks for watching.

I have never been able to find coriander root at any of my local Asian markets. They are all small markets with very little fresh produce.

Yeah, you can either grow your own or just use the stalks that are somewhere in between the leaves and the roots. You can find roots in London but as you say sometimes the quality Is poor and its expensive.

Depending where you live, most decent Asian supermarkets will have them. In the UK, most large chain supermarkets will have some options. If you're in a remote location with no options, then amazon will have options for you.
