Hello all my foodies! We are going to make 5 most popular Asian Stir-Fry Sauces. You can make countless dishes with these 5 Asian stir-fry sauces: brown sauce, general tso's sauce, teriyaki sauce, honey sesame sauce, and sweet and sour sauce. You can also make these ahead of time and store them in your fridge. It makes cooking faster and easier.

1. Brown Sauce 基本炒汁:
1 tablespoon soy sauce
2 tablespoons oyster sauce
1/2 tablespoon dark soy sauce
1 tablespoon rice wine
1 teaspoon sesame oil
Pinch of sugar
Pinch of white pepper
1/2 cup chicken stock (or beef stock)
1 tablespoon cornstarch slurry (1 tablespoon cornstarch and 1 tablespoon water) (you can add the cornstarch slurry directly in the sauce, or add it later while stir-frying.)
2. General Tso’s 左宗棠
1 tablespoon soy sauce
2 tablespoons oyster sauce
1 tablespoon Shaoxing wine
1 tablespoon rice vinegar
1 tablespoon red chili oil
2 tablespoons sugar
Pinch of white pepper
2 garlic cloves, finely minced
5 red dried chilies
1/2 cup chicken stock
1 tablespoon cornstarch slurry (1 tablespoon cornstarch and 1 tablespoon water) (you can add the cornstarch slurry directly in the sauce, or add it later while stir-frying.)
3. Teriyaki sauce 照燒
2 tablespoons soy sauce
2 tablespoons mirin
2 tablespoons sake
2 tablespoons honey
2 garlic cloves, minced
1/2 cup chicken stock
1 tablespoon cornstarch slurry (1 tablespoon cornstarch and 1 tablespoon water) (you can add the cornstarch slurry directly in the sauce, or add it later while stir-frying.)
4. Honey Sesame (for sesame chicken) 蜜糖芝麻
1 tablespoons soy sauce
2 tablespoons oyster sauce
1 tablespoon rice wine
2 tablespoons rice vinegar
3 tablespoons honey
3 tablespoons roasted white sesame seeds
1/2 cup chicken stock
1 tablespoon cornstarch slurry (1 tablespoon cornstarch and 1 tablespoon water) (you can add the cornstarch slurry directly in the sauce, or add it later while stir-frying.)
5. Sweet and Sour 甜酸
¼ teaspoon salt
2 tablespoons rice vinegar
3 tablespoons ketchup
3 tablespoons sugar
1/2 cup chicken stock
1 tablespoon cornstarch slurry (1 tablespoon cornstarch and 1 tablespoon water) (you can add the cornstarch slurry directly in the sauce, or add it later while stir-frying.)

    How did you know 6 months ago that I was going to need a video like this today? 😂 I just made all 5 sauces and they’re DELISH! (Thank god I had all the ingredients. Substituted the sake with dry sherry). I’m storing them and can’t wait to use them all. Thank you! This saves me from endless searches.

    @@CiCiLi Oh my god! I remember watching your chicken stir fry video of 6 years ago. In those 6 years I tried to cook just like you did in that video and I tried so many times. Now after all these years I think I finally know the right technique. The importance of Wok hei and to have a hot pan, slurry, the perfect ratio ingredients to make the sauce. And now you showed me I can use chicken stock instead of water. I'm really excited to try this out ☺️

    For the mirin, I usually get the one from Kikkoman. For the sake, you can go to a Japanese liquor store, and ask them for a cooking sake. The price is usually less than $10.

    I used to love that "glow in the dark" red sweet and sour sauce at the local Chinese place when I was a kid....and one day I decided I needed to look up how it was made.... And there it was. Ketchup. 😳 And it has frightened me away from even making it myself....for some reason. (Ketchup?....where are the french fries?!) Oh boy...maybe I can bribe someone else in the house to finish the sauce...😱 Other than that....excellent video. Very straight forward. Thank you. 🥰

    @@MicukoFelton Probably just the brain being unable to NOT imagine the ketchup flavor mixed too strongly into the food. Irrational. ‘Tis just vinegar and tomato! Luckily, I grew out of it. 🤔

    If you were vegetarian, there's also vegetarian “oyster” sauce available. But you could always replace it with a little more soy sauce. 👍

    This is such a wonderful video! Thank you!! Do you know how to make the sauce that is used for moo goo gai pan? That is my very favorite Asian dish. Also, if you are making chicken and broccoli stir fry, do you use the same brown sauce, or something else?
