    I like how sometimes, he starts a sentence in his normal voice and then remembers that he’s supposed to be larping, and switches to his soft spoken whisper halfway through. The video ends on one of those.

    I liked early 90s Marco for his insane energy and abundant, nearly absurd confidence, but this Marco seems finally to be at peace. A true master, and a man for the ages.

    He lifts the fryer basket so that they are no longer submerged. It's still very hot, but they cool so fast it wouldn't hurt after 10-15 seconds for a normal person

    You see him casually picking those arancinis out of the fryer... Don't try this at home, folks! You'll end up in the ER with second degree burns. After decades of working behind a stove, his fingertips are more like hoofs from corneal building up over the years while you still have regular hands with functioning nerve-ends in them. I've seen cooks measure the temperature of their frying oil or pan with their fingers to find that it's just right, and again, although it's interesting to watch, don't do this!

    Wash them. They are for use in a commercial kitchen where you're serving several portions continuously. It's quite literally a 'breading station' at that point. For home use, unnecessary but he's a chef so that's what he's using.

    Arancini are usually bigger that what MPW made here. There is a similar dish from the roman region called Suppli alla Romana tend to be made oblong. Regardless they are extremely tasty little things
