    I love this man. He said treat the pan like a clock so he arranges the steak clockwise to know which order he put them in. Then im assuming he forgot. Because when he turned them he went counterclockwise.

    No. Remember, the steaks had moved 180° because he turned the pan! That's why he started from the other side. I was impressed that he kept track of that

    Yes! He said it should be served at the table. The waiter gives hot plates to the guests and then serve them from a warm tray, women first and always from the left, since you use your right hand to put the beef on the plates (With spoon and fork). That's some old school fancy serving for you!
