Ciao Lidia,sono Donika, vivo e lavoro per addesso a New York. Vedo benissimo l'arte della cucina italiana,sana, d''energia per un lungo tempo,di sapori particolari ma anche di colori, bianco il piatto, verde e rosso il contenuto. Vedere e capire il tuo modo di cucinare e' un dono. Le sue tecniche, i suoi segretti buoni fino alla cottura e la prezentazioni del piatto, confermano il dono. I tempi molto difficili a causa anche dei chimici sparsi nel aria cercando non solo the lungs ma anche lo stomaco, chiedevano lo sconffito. Vedere e capire a questo tempo ,il tuo modo di cucinare fa crescere in valore l'appettito ,il sapore e il buon gusto. Sconficendo cosi il veleno. Grazie!
I could eat that entire meal all by myself, and the filet is just the way I like it as well.
The sound of the vegetables searing is pure ASMR and then the meat just pure joy to hear

Wow does that look wonderful!! You make me so happy to watch. Missing both of my grandmothers from Italy and they were the best cooks I know! You remind me so much of them , and cook so many things the same way they did. 💕

The Mushroom Marsala steak sauce was fantastic Chef Lidia. I'll admit I was dubious due to no stock being added. But none was needed. It takes a lot for a recipe to make my permanent recipe folder. That being that its delicious and easy to do with easy to get and fewer ingredients. And this has it all. Thanks.

I forgot to subscribe. I just did.
What i would do is deglaze the fond from the steak with the juices from the mushrooms and add it to the mushrooms for a more intense flavor.

Deglaze with the wine then reduce. Pan juices are sinful to let go to waste.

I was thinking the same exact thing! I love Lidia, but I was confused as to why she didn't deglaze the steak pan to make the mushroom sauce. Felt like it would have added to the flavor.

Polenta my grandmother was from czech and her Polenta was made dense and iooked like a cake was sliced and covered with a meat sauce. If there was leftovers was fried in bacon grease for breakfast ALOHA
I love escarole and this is the simplest way to cook EVERYTHING...a little extra virgin olive oil, fresh garlic and salt. Cibo per gli dei!

We live in the extreme North,so we dont have green stuff- fresh rosmarin and others-)we have to use the dried ones that are sold in sachets.

I would go with multiple forms of onions instead- maybe a bit of dissolving anchovy for bite

I use a variety of pots including Le Creuset and Staub for oven-friendly dishes. For Saute pans, I sometimes use Cuisinart, All-Clad, Agnelli, and several other brands.

Filet mignon!
That long filet of beef probably costs more than a week's salary for me. That huge piece of meat was not cheap!
We, (attempt), to limit beef intake to once a week. With the escarole and mushrooms this will definitely be our next beefy meal. I do have to say that I’m a little concerned that there is NO pot of boiling water on the stove. 🤣
