400 g beef tenderloin, very thin strips
4 lavash
2 tomatoes, thinly sliced
1 teaspoon of isot
1.5 teaspoons sumac
1 teaspoon salt
1 teaspoon black pepper
1 pinch red pepper flakes
Half a glass of hot water
10 sprigs of parsley, chopped
Half onion, sliced
1 teaspoon butter
Put olive oil in a large pan and heat over high heat. Place the meat in the heated oil, spaced apart. While the meat is roasting on high heat, add chili peppers, 1 teaspoon of sumac and isot to the hot water and mix.
When the meat is roasted and turns brown in places, add butter and salt.
Spray the sumac and isot water onto the pan occasionally and scrape off the remaining flavor.
Add the cherry tomatoes to the pan and continue roasting over medium heat, adding water occasionally.
Mix onion, parsley, salt and half a teaspoon of sumac.
Put butter in the pan and press the lavash onto the meat. After the flavor of the meat transfers to the lavash, put the cooked meat in the lavash.
After adding the sumac onion, first fold the short edges in and make a wrap.
Whether traditional wrap tantuni or bread tantuni is ready!

You should do Texan version of it. Smoke the brisket, slice them thin and sear them on a pan with Turkish spices and add a little bit of bbq sauce (gotta add some Texas blood, right?) and invite me to taste 😀
God, we loved the Tantuni, which we‘ve eaten in Istanbul last year. We miss our beloved Turkey. Greetings from Germany ❤️❤️
People like you should rule the world. Refika 🙏🏾 you are incredible.
Thank you for the recipe! Greetings from Bulgaria!
Hola from Mexico. I used chili mora because we don´t have isot . It worked great.
You must know that Mark Weins is in Turkey right now.... promoting and eating the wonderful food of your country ❤
More Turkish desserts, please! Love your channel. Thanks.

I love using isot. I never heard it before you taught me about it. I actually put it in my brown children’s stockings for Christmas last year. Since I have your knife and you sharpened as such then I won’t no longer be so afraid to sharpen it. I love your knife so much.
Tessekur ederim for the recipe, and for the hints!
Thank you rafika for all of your wonderful recipes, I've tried lots of them now and my family love them all. keep them coming guys xx
I’ve cooked this. It’s brilliant. No more steak sandwiches for me. That onion relish is a revelation.
YUM!! I'm excited to try this!
Cheers!!! Delicious
We have the same in Lebanon but we add tarator sauce which is tahini, lemon garlic, salt and cold water,so we add this sauce before rolling the bread and its our meat shawarma

Thank you very much for sharing this recipe! I had and made this as a kid, but forgot the details (it was many decades ago and I live in the US now). I cannot wait to share this with my brother. I also very much recall the many cotton fields in the entire region.
Refika you are my teacher ❤ I learned all turkish cuisine from you and it always turned out wonderful 🥰 thanks for sharing your knowledge and experience ❣️
Yum ❤
Hello miss Refika thank you so much for sharing your positive energy along with the recepies. You inspired me and made me feel like I can make some food that I thought only grandmas and profesionals could make. So thank you so much... I would like to give an ide for videos. So this is not a street food as far as i know, in my contry it is called Sarma and it came to our region with the otomans, so we kinda took it and consider it traditional food that always has a place at the table for family gatherings (no sarma, no slava). So the recepies are different, we wrap meat in sour cabage, peope in Turkey as I saw put it in something else. Anyway I didn't find it on your chanell (saw one for Dolma) so I thought maybe it is a good idea :)
Thank you.from newzealand❤
Delicious ❤
OMG I love your food and how you recreate dishes from other countries 😛😋💕💕💕
I like this. Yes, simpler to make with simpler ingredients!

Linda here…excellent video, as always. Love how you guys interact with each other. I’d really like to see Turkish versions of fried rice, if you are agreeable. Also, recipes that are known to you to be lower carb. Not keto, just lower carb. Thanks for everything you and your team do. Always looking forward to your videos ❤

You mean pilaf? It is not like fried rice, it is salty and buttery. Does not taste like Asian rice at all...
What a lovely video. I can’t wait to try it! Filet is very expensive here so I may need to go with a chewy cut but that’s okay! It’s street food so I will look for it the next time I am in Türkiye. Thank you!

You can boil the meat first as in the original. You won't regret trying it when you come to Turkey. 😋 I also recommend you to try Tantuni with yoghurt.
My grandfather used to sharpen his knife on the back kitchen door step you can still see where the step has worn away
Yummmmmmmm....
I wish I could watch you guys whole day. Can you make more mints like 30min or more. Your just amazing. Love ❤️ and hugs 🫂 From Zanzibar Island Tanzania 🇹🇿

Hi friends so nice and delicious food good recipes my fist comments and like this recipe ❤
Hi Refika Have you ever uploaded Keskek recipe? I tried it once in Tukiye and i loved it 😋
❤
Street food in Mexico beats the world! It’s just absolutely the best, my favorite is beef head tacos, I’m not sure if you guys use the head meat in turkey but it is so delicious and when you put it in tacos with fresh onion and cilantro and a very spicy salsa it’s just heaven, also we dip the corn tortilla in the meat juices like you did the lavash 👍🏻

Street food in Thailand is also rich and good. Yes, In Turkey there are dishes with head meat even with the fat of "eye". It is called "söğüş". It is more regional thing. I never tried it...
😍
hey Refika can you make KEREBIC from Mersin? And Sushi maybe ? Churros ?
Looks tasty! However, beef fillet is the most expensive beef you can buy in London. I wish that you would have shown how to do this with a more affordable piece of beef.
Nice quick and easy recipe. I might be more inclined to use a cheaper cut of beef and pre-cook. I don't mind cooking once and cooking again. Interesting info about the cotton, cotton seed oil. Hello from lovely Oregon, US.
🎉🎉🎉
Another great recipe for me to try out. How do you make that muscle and rice in its shell. I can’t remember what it is called.
Hi Refika! I would like you to show us Turkish Mussels recipe. My family loved it when we visited Turkey. It was the first time we had tasted a sea street food. It blew our mind 😊
I would love to see you make tava. It is found around southern Turkey, namely Adana.
Your recipes are amazing I love trying different things. Watching you and Borek always makes my day a happy day..thank you GOD bless and be safe.,🐞🦬🥰🐢

Can you guys do a flavorful papaya salad, but give it your touch? It’s a south eastern Asian food, I know a lot of different countries do it. What would you do to yours?
I never tested sumac it looks good but I'd be curious to know what you have to tell about it in more details !
How do you make your chilli sauce?
Please make Gozleme 🙏
Amazing …. Pl do some wholewheat bread recipes with cheese or other stuff on it or in it …

Refika do you know other recipes with cotton oil is it healthy i heard is neutral
Refika, can I use Aleppo pepper mixed with additional crushed red pepper flakes instead of Isot? My understanding is Aleppo is Isot's "cousin" but not as spicy. I can't wait to make this.
Clicked the like button just for Borek 😂😂 Just kidding and and of course for the amazing Refika too. 😍😊

Refika can you please tell how to keep olive oil fresh? My oil seems to go bad after 2 to 3 weeks after it is open. Large bottle seems such a waste. What do I do? Thank you Refika I love you and bless you.
So about to Ayran from a Shop - I Mix it at my temporary Home in Istanbul with 1/2 Water and 1/2 Ayran - so refreshing and light with real taste... To Tantuni - I personally like much thinners cuts - these are only personnel preferences...
👍
Thank you for showing that you clean a knife after sharpening. I very rarely see this. So I assume that many simply let the metal burrs go into the food....?
Kokoreç! Oh please. I haven't had since I was in Turkey many years ago.
If you do the recipe, don't forget to press the wrapped tantuni on a pan to create an oily goodness and a crunchy texture.
You should hire me asan official taste tester. I’m really good at saying yummm

Can I put a bit of tahini sauce on it ?
If you want to evenly and finely slice meat you can semi freeze the meat, this firms the protein and allows for fine thin cuts across the grain of the meat. With the sumac and onions i like to use both fresh parsly and dried parsley, the dry parsley rehydrates with the onion juices. I am curious what the deglazing stock would be like with the addition of Tomato & Pepper Mix Paste - Karışık Salça rather than just adding red chilli flake, any thoughts? Thank you for the recipe, take care, God bless one and all.
@Refika

Hello, thank you for your comment. If you deglaze it with any kind of paste, the flavor will change. The original recipe uses only cottonseed oil. So tomato or pepper paste is a product that is not included in this recipe. Of course you can use it, but it will be tomato sauced meat. ☺️

@@Refika Thank you for the reply I may just try using diluted pepper paste rather than pepper flakes. I like to make the original recipe as best as i can, then i start making changes. Afew good, most soso, some oh so aweful, but i learn something even from my mistakes.
We have something like this in Kolkata and it is famous in its own right. It is called kathi roll.
How about a chopped cheese from NYC?
