Ingredients List:
For the Beef Stuffing:
500g beef, thinly diced
4-5 tablespoons vegetable oil
1 teaspoon ground paprika
1 teaspoon salt
about 1/2 cup water
For the Lavash Wrap:
275ml water + more if needed
500gr. bread flour (1 used 200gr. of it whole wheat)
1 tsp each sugar and salt
Homemade or store-bought lavash bread
Fresh Garnishes:
1 small red onion, thinly sliced
1/2 cup fresh parsley, chopped
2 medium tomato, diced
1 lemon, cut into wedges
Pickled peppers or cucumbers (optional)
For the Ayran:
1 cup plain yogurt
2-3 cups or more cold water
Salt to taste
Adjust the seasoning in the beef stuffing to your preference.
Homemade lavash can enhance the overall flavor, but store-bought is a convenient and tasty alternative.
Chill the ayran before serving for a refreshing accompaniment to your tantuni.

your yoghurt drink reminds me of the buttermilk we have in stores here in the USA.....it is cooked with a lot but in the south we like to drink it....especially those who are older like me.......we bought land and built a house 2 years ago and just discovered we have 3 Sumac trees!.....will be harvesting the berries this fall!

What cut of beef would you recommend? :) I also wanted to ask if you once could make a video about using dried eggplants. I am from Germany but a big fan of Turkish cuisine and culture. I am even considering moving to Istanbul for a couple of months. My best Saturday afternoon is going to my local Turkish supermarket and I am always flirting with the dried eggplant cups and also red dried peppers. But I never have tried it somewhere. Hello, your lavash bread looks like our flour tortillas in Mexico, We eat them like tacos with cheese or beef as you did, or even only with a little butter. Could you please tell me if I can buy in Amazon the pan where you cooked the bread?

I got one exactly like hers at Tjmax. It is pretty solid,but is not cast iron and it doesn't scratch my glass top stove.

Could u use minced beef to make this? There is a Turkish street food in north Turkey that's minced beef with a gravy in bread like a bagguette, i cant remember its name.
It looks like the tortillas I make. Fresh is always better.

Obvious tip. Always let the pan heat up before adding oil. Then let the oil heat before adding the food.
