Prickly Pear Limeade
For 2 servings
INGREDIENTS:
-4 prickly pears, yield slightly to pressure, similar to a ripe avocado
-3 strips of lime zest, about 1" long each, removed using veggie peeler
-1 small strip of fresh ginger, about 1" long and 1/4" wide, more or less to taste
-½ cup fresh lime juice, from 3-4 limes
-1/2 cup water
-2-3 T agave nectar, or to taste
PROCESS:
-Slice prickly pear in half from top and bottom. Lay it flat, and with a paring knife, cut ¼" into the skin, and pull the rest of the way off with your fingers ... kind of like a kiwi.
-Using a vegetable peeler, cut 3 strips of lime zest
-Skin your ginger, and then cut a 1"
-Add water and then agave
-Blend it together for about a minute, starting on low and increasing to medium high.
-Strain through cheesecloth-lined sieve, squeezing out as much of the liquid as possible
-Pour into glasses filled full of ice cubes and enjoy.

Is there a difference between Green prickly pears and reds? Or are the green ones not ripe yet?

Julio Garcia The green ones are the ripe ones since they have a sweeter taste and the red ones are a bit more bland or sour.

What I like about this Thirsty For... segment is that they do cultural drinks around the world that many don't know about. And when I see them do a drink from a country I've been to or love, I get really excited. I know butterbeer is dear to all of the potterheads out there, but honestly, I'd like the last episode to be a drink that reflects part of a country, be it be halo-halo or the Yak tea.

Thank you! I grew up eating these. You can find them at just about any Mexican market in CA. Just be forewarned that they are not usually de-spined but that's nothing a fork, knife and some hand-eye coordination can't fix. Hopefully more people will learn how tasty prickly pears are. Bravo Tastemade.

Just made this and it was delicious! I found the prickly pear (at least some that looked trust worthy) at the local Whole Foods. The great thing about the agave is that you can add more to taste even after it's served, and it won't need time to dissolve. So much better than sugar. Best served really cold in my opinion. I might even make this into ice pops!

I found, on the off chance, some prickly pears at my local grocery store one day and totally made this! Let me tell you - this is one you remember. Delicious! If I could say anything, though, it's that the ginger, though tasty, doesn't do much to improve the flavor - I preferred it a little more simple. And this shit is strong af. Cut it with a lot of water.

That looks so delicious. But for peeling ginger you might want to try using a teaspoon. Run the edge along the skin with some pressure, that way it just scrapes away the skin and leaves all the good stuff for being used in whatever you're making. :)
