NOON CHAI
For 4 Servings
INGREDIENTS:
3 cups water
1 T wuyi oolong tea leaves
½ tsp baking soda
¼ tsp salt
8 cardamom pods, crushed to expose the seeds
1 cinnamon stick
1 star anise
2 cups milk
1 Tablespoon sugar
Garnish:
-finely chopped, raw sliced almonds and pistachios
PROCESS
-Bring 3 cups of water to a boil then bring down to a simmer.
-Add tea, baking soda, salt, and spices, and simmer for 20 minutes.
-After 20 minutes of light simmering, add 2 cups of cold milk + sugar and turn up heat to high.
-Continue to cook over high heat, stirring constantly, until mixture just comes to a boil.
-Strain and serve with finely chopped almonds and pistachios on top.

1} won't the salt spoil the milk, won't it split the milk 2} Do you know other such not so very famous herbs or spices that can be added to milk tea which will enhance the overall taste of a tea??? 2} can we put salt, baking powder and other masala at last i.e when the tea is already boiling. Will it split the milk present in tea? 3} will their be a taste difference if we add himalayan salt instead of normal salt???

Kashmiri Chai or Pink Chai is always the best part in weddings! Everyone comes over to our house after Jummah Prayers and my mom makes this. I like mine with some sugar, salt, and pistachio!

Absolutely beautiful. Could you do a video for "chhatta"? It's a warm, milky drink flavoured with a rose, cardamom and other spices that is pink in colour. It is favoured by the namdhari Sikhs because it does not contain any caffeine. Afaik namdhari Sikhs do not take any form of intoxicant.

I sure wish the video instructions followed the recipe in the details and only called for 1/2 a teaspoon of soda and 1/4 teaspoon instead of 1 teaspoon each. Not sure what to do with my 5 cups of super salty tea now.

Being a Pakistani Kashmiri, we call it Sabz chai which literally means pink tea. The punjabi version of this tea is sweet but the original version is salty. Plus the original version does not have any spices like star anise, cardimom or cinnamon. But guessing that since you dont have the proper tea pretty much you have to make it taste similar to the original and therefore the spices.

Indian Kashmiri here .... we call it noon chai ... n we dont add the star anise et al either ... in our part of the world its the intensity of the pink that we really work hard on which takes lots of boiling stirring boiling ....

The milk we add is super chilled and other names are "pink tea" or "Kashmiri chai" .... you can use 100% pure green tea too,,,, works fine.... :D

It is called Kashmiri chai in Pakistan. Usually and mostly in many parts of the country it is served on winters only making it a speciality tea. The method and color is legit. But it is a lot thicker and richer because it is cooked quite a lot.
That song will be in stuck on repeat in my mind all day! I hope the finale is butterbeer.

just a note, but this isn't chai tea, this is "noon chai" - a salty tea commonly drank in Pakistan. Chai itself is Indian, in origin. I'm a chai fan, but never had this - can't wait to try!
What did it say at the end on the tea? My dad, who's pakistani, couldnt read it. Is it not urdu?

Noon is Kashmiri term for salt thus the name noon chai (salty tea). Loon is Panjabi term and not to be mixed up with this one.

Chinese oolong tea, really? Tastemade couldn't have found a more authentic alternative on Amazon or some place else? The tea leaves are the most important part of the taste. My grandmother makes this tea during the winter whenever I go back to Pakistan, and it always reminds me of home.

why dont you guys try and get your hands on some real salep. i know its hard to find because it was over consumed in the past and now is very hard to export out of turkey, but my mum says its so much better than the powder we buy nowadays.
