I’ve gotten to know which items you’re about to prepare just by the plates you get out. I looked at the menu online but I still can’t figure out what the yellow squares are or the fish in the sealed bags. But I love your videos, so relaxing!!

those were the polenta i believe, and the fish was halibut, unless you mean the vac seal bags, that’s the sword fish!

they came with the josper ovens. searching meat clamp tongs, or josper tongs should bring them up

Any restaurant that uses live fire to cook but still serves "flat carbon pancake on a bun" rather than real hamburgers doesn't deserve to be in business. If that's what customers want then send them to Steak n Shake or Five Guys.
