Cooking POV: Slow Sunday Service- Sautee Edition

Howdy y'all. Join me on a little POV action to see what I do on a daily basis outside of KZread. Today I am working on the Sautee Station, my most hated place to work, but the job has to be done. Pasta was in full affect this slow Sunday. Let me know what you think about these POV videos and if I should continue!

    This is a GREAT idea, and you should keep it going. I worked on the other side of the line during my student days, but also pitched in for prep if needed. Love the mise-en-place.

    Our dishwasher. We have a pan that he will come and empty every so often. Kind of a ninja with it

    i am not and have never been any kind of chef. Never worked in a kitchen at all. Can you tell me what exactly the "executive chef " does at your kitchen? cause from what I saw he just plays on his phone.....?

    Our executive chef is still fairly new to this restaurant and is still training. If you noticed, I was kind of training him on some of the garnishes throughout the video. We had several issues with staffing and ordering this day as well. He was doing/sending a lot of messages to our reps/sales team to get some bigger parties coming up in the week, sorted out. Looks bad, from the outsider perspective, but there was plenty of good reasoning behind it.

    I watch plenty of Gordon Ramsey. From your perspective how good would you say his advice is just for cooking food in a restaurant?

    Depends on what way you want to look at it. A lot of his content that is on KZread, cooking tutorial wise, is designed for the Home Cook. They are meant to be paused, slowed down and re-watched over and over. Really good advice/video guidance to help the average joe trying to learn some basic skills, but doing restaurant line work is its own animal. The constant pressure of having food leave every 15 mins from the window can for sure put a lot of stress on someone, and having a full rail of tickets all with that same timer, adds up quickly. You are always a slave to the printer. Thank you for asking!

    Why throw trash the food simply because you used the wrong meat? Couldn’t you have simply completed it somewhat and gave it to an employee or packaged it for a donation somewhere
