    I watch plenty of Gordon Ramsey. From your perspective how good would you say his advice is just for cooking food in a restaurant?

    Depends on what way you want to look at it. A lot of his content that is on KZread, cooking tutorial wise, is designed for the Home Cook. They are meant to be paused, slowed down and re-watched over and over. Really good advice/video guidance to help the average joe trying to learn some basic skills, but doing restaurant line work is its own animal. The constant pressure of having food leave every 15 mins from the window can for sure put a lot of stress on someone, and having a full rail of tickets all with that same timer, adds up quickly. You are always a slave to the printer. Thank you for asking!

    Cooking steaks would be nerve wrecking for me. Nowadays everyone is so damn picky about doneness. One time this woman at a table next to ours sent her steak back 3 times yes 3 freaking times. I wanted to just yell to her “get the pork chops”

    Just have to be confident in what you are doing. The broiler is my favorite station to work, but I was never always good at it, when first starting out. People not knowing how they want their steaks cooked is a real thing and it is to be expected.

    Why throw trash the food simply because you used the wrong meat? Couldn’t you have simply completed it somewhat and gave it to an employee or packaged it for a donation somewhere

    sounds like a professional chef with proper call backs and cares about the im guessing hoods to be pulled down etc, great video and pride in your work! from a cook of a decade this is amazing to see.

    Every Sunday we pull the filters down from the hoods, to give them a good soaking. My broiler chef wanted to pull them down mid service, but its always better to pull em down after. I love working the pass, a lot of the guys on the line like to say I know how to drive the car. Takes a lot of practice and confidence sometimes. Thanks for watching!

    i am not and have never been any kind of chef. Never worked in a kitchen at all. Can you tell me what exactly the "executive chef " does at your kitchen? cause from what I saw he just plays on his phone.....?

    Our executive chef is still fairly new to this restaurant and is still training. If you noticed, I was kind of training him on some of the garnishes throughout the video. We had several issues with staffing and ordering this day as well. He was doing/sending a lot of messages to our reps/sales team to get some bigger parties coming up in the week, sorted out. Looks bad, from the outsider perspective, but there was plenty of good reasoning behind it.

    I prefer all my steaks besides a ribeye cooked med-rare. With a ribeye, I usually go medium, just to get that fat rendered a little bit more.

    You are very much correct. Some chefs can nail it perfectly, some people just forget about it and send out charcoal. Just think about the family BBQ, and the weird uncle serves the little coal pucks that are supposed to be burgers lol

    I enjoy simplicity at its finest: Eggs. Bacon. Bread. Simple to quickly warm up some eggs, toss bread into toaster (or fry pan) & place the bacon in the oven. Set it & leave for ~10min & reassemble. Simple 🫶🏽
