Plov( Pilaf/Palov Osh) with chicken. All tips and tricks on how to make this dish perfect!

Plov is a popular Uzbek dish, also referred to as "pilaf" or "palov osh".
It is usually made with meat, rice, onions, carrots and spices.
PLOV WITH CHICKEN!
You will need:
2.5 lb (1.1 kg) chicken ( I used chicken thigh meat)
2 lb (900g/4 cups) rice ( I used Egyptian rice or you can use Baldo)
2 lb (900g) carrots (julienne sliced)
2 large onions(450g/1 lb) half-moon sliced
2 cups Garbanzo beans (previously soaked or from the jar)
50-100g(hand full) black raisins
2 head of garlic
2 dry chili peppers
2 tablespoons salt
2 teaspoons black pepper
1 tablespoon cumin seeds
1 dash saffron flowers
2 tablespoons Plov Spice Mix:
( turmeric, garlic powder, ground coriander, ground cumin, paprika, chili pepper, marjoram, barberry)
You can make your own Plov Spice Mix.

You also will need some good oil. I would suggest using combination of two or ever three different ones;
For the amount of Plov I was making( for 6 people) I used 300 ml of oil.
100ml of "ZIGIR"( linseed oil) If you can find it.
Or you can use cottonseed oil : www.amazon.com/Gefen-Pure-Cot...
200 ml of any high smoking point oil.
I used filtered sunflower oil.
Tip#1 Always wash rice in cold water(at least 6 times) or until water runs clear.
Tip#2 Soak rice before cooking for 30 minutes, add salt.
Tip#3 When you fry meat, keep your temperature high, so meat browns and not boils.
Tip#4 Do not add less carrots. Amount of carrots should equal to amount of meat and rice. Carrots will make your Plov taste better.
Tip#5 Add spices at the last stage of frying.
Tip#6 Add only enough water to cover rice by 1 centimeter( less than ½ inch) You can always add more if needed.

    I made this plov today and my family really enjoyed it. Usually my mom makes plov in our home but I decided to do it this time. I used beef and 2 packets of plov spice blend (70 grams) and I didn't add chickpeas or raisins for personal preference. Turned out great and the explanation and measurements were perfect. Also made the salad and that is my fav way to slice tomatoes now. Thank you for the great video.

    This rice dish looks amazing!! It reminds me of Aghan Kabli Pulao. In the summer my favorite salad is tomato and onion! Thank you for sharing. 😊

    Garlic is not a main flavouring in this dish ..... adds two entire heads ;) Looks delicious though! It's interesting how this seems to combine elements of Turkish, Iranian, Indian etc. cuisine, the name itself (Pilav/Plov/Pulao) spanning many languages in various forms.
