Chicken Rissoles. AKA " Kotleti". How to make them flavorful and juicy!

Rissoles are a cross between meatballs and hamburger patties. Also known as "Kotleti". Sometimes Rissoles made with chicken , especially chicken breast can be on the dry side and with not enough flavor. I will share my grandmother's recipe on how to make them flavorful and juicy.
CHICKEN RISSOLES:
You will need:
2 lb (900g) Chicken breast(about 4 large ones)
1 small potato
1 small wedge green cabbage
1 small tomato
1 small onion
4-5 cloves garlic
1 tbsp salt
1 tsp pepper
1 tsp Hungarian paprika
1 tsp Fenugreek
1 tbsp Dry herbs
1 tbsp tomato paste
2 cup fresh bread crumbs(1 cup dry)
2 eggs
3 tbsp Ghee for frying

    Very nicely done......and as a Chef, I have to make a *HUGE* correction that seems to have everyone beLIEving that when cooking with regular _'unseparated'_ butter in a pan, just add oil, and that will prevent the butter from burning ---> *1,000% WRONG* Butter, when separated in two different ways whether being the Ghee method or the Clarified Butter method, regardless which way, the end result is still the same! The question is....what exactly is being separated? Butter has 3 main ingredients being; Butterfat (Milkfat), Water and Whey (Protein) and by _'separating'_ all three forcing the Butterfat then becoming 100% _'Clarified Butter'_ which can be then left on the counter for months and will never go bad being pure Butter Fat (oil). What happens to the Whey Protein? When pure butter is being heated, the water will slowly boil away and the Whey Proteins will settle to the bottom of the pot .... *BUT BE CARFUL NOT TO BURN THE WHEY* in the separating heating process! So the end result being that everyone has to ask yourselves! Suppose you make 3 cups of Clarified Butter with the Whey in the butter....can the Whey burn? *YES OF COURSE.* Whey will burn in 100 gallons of oil just as it will burn in your pan beLIEving that, _"just add cooking oil to the butter and it won't burn"_ ....the Whey will burn by itself, with a tablespoon of oil added or in 100 gallons of oil, there is no difference! None, what so ever! I hope that I made it understandable enough to correct someone's made-up fallacy about this issue. Enjoy...😉

    YESSS THANK YOU!! I tried making this recently using another receipe and it came out very dry, not as good as my ex boyfriend's mom's kotleti 😅
