Here's a perfect pot roast recipe you can cook on the stove top that is super simple and tastes fantastic. My mama likes a boneless chuck roast and prefers a beef bouillon paste for seasoning the roast, but any seasoning rub will work. Throw your chuck roast in a pot on the stove and it practically cooks itself. If you've ever wondered how to cook the perfect pot roast, look no farther

What you need for this Pot Roast Recipe
BONELESS CHUCK ROAST
SEASONING RUB
How to Cook a Perfect Pot Roast on the Stove Top
Buy a roast with some fat in it. Marbling in the meat adds flavor and juiciness; the thinner and richer the marbling, the better.
For a stove top roast preparation, use a pot with a tight fitting lid and a heavy bottom.
Season the roast generously with salt, pepper, and whatever seasonings you like. A beef bouillon paste like my mama uses in the video is delicious.
Place the pot on the stove with just a few spoonfuls of water in the bottom and add the roast.
Lightly brown the roast on high heat for a few minutes.
Reduce the heat down to low, and cover the pot with a lid.
Check the roast periodically.
The beef will release it's flavors and cook in it's own juices.
Once the roast cooks out it's juices, it will begin to reduce.
About an hour into cooking, turn the roast.
Continue cooking until the roast cooks down to it's grease and drippings.
Remove the lid, raise the heat to medium, and brown the meat a final time in it's grease.
Remove meat from the pot.
Want Gravy?
To make beef gravy from the drippings, add a bit of flour and mix well over medium heat. Stir for about
1 minute until the flour and fat are well incorporated and the flour gets a bit of color. Raise the temperature and stir in broth or water and continue
stirring until the mixture begins to boil and thicken, and extra salt and seasoning as desired and pour into a gravy bowl.
And that's it!

    This has been my go to recipe since I found this a few years ago. It always tastes amazing. I don't care to have my roast any other way now.     OMG! Today is 3/27/19. I used the same cut at 3 lbs but seasoned it with a bit of Montreal Steak seasoning, oregano, garlic powder, 1 sazon packet and 10 whole garlic cloves. I applied the same method to cook the meat as your memaw did and Holy Guacamole it was smack your mama good 😋 Thanks for the video

    Kathy Duarte depending on size of roast but usually 3-3 1/2 hours for a 3 pound roast. I have done chuck and London broil this way. It so delicious.

    I have never seen a roast cooked this way. This is definitely going to be the way I do it next time. I live in Texas and you DON'T want to turn the oven on...unless it's Winter.     @@peterpiper_203 I'm not sure why the previous poster said not to, but I saw an experiment done that really scared me. They basically had a clean sink area tested under blue light then took a piece of meat and rinsed it the way most people would. The area was then illuminated under the blue light again and it was horrifying. There was a huge splash zone of harmful bacteria on everything. Counter tops, the window and the curtains, even the dishes sitting on the dish rack off to the side of the sink. They tested that bacteria positive for salmonella and all kinds of disgusting things that you do not want on your kitchen surfaces. They also cooked meat that was rinsed and meat that was not rinsed then tested for bacterial and harmful contaminants and both were perfectly safe after cooking to the proper temp. So it seems that washing your meat maybe more harmful than helpful. However if I do feel the need to wash it, I clear the entire sink area. I fill a large pot with cool tap water I like to add a bit of lemon juice or vinegar, but it's not necessary. Then I will very slowly submerge my meat and gently rub under the water, as to avoid any splashing. When I'm done with the water, I'll take it and dump it some where else so I don't contaminate my kitchen. I'll then dry the meat and cook as usual. I hope this helps, sorry for the novel

    @@LovelyNoemmi I agree with your statement I know why they say not too I've worked in food facilities I'm in the hvac industry more piping then service Many friends are as well and many in the service side They tell me where not to eat what grocery stores to avoid I do as you do minizing the splashing and then wash everything down with some anti bacterial let sit for 5min and use paper towels People in general are disgusting

    I tried this yesterday. Best roast i ever cooked. My husband loved it. And we didnt bother with gravy. We ate with just the juice. So, so good. And then on the bread with mayo while it was still a littke warm, oh my! Heaven!

    I never thought to rub the bullion paste right on the meat! I usually add a tbsp to two cups of water and braise in the oven. I'm going to do this next time. Looks sooo good!

    Perfect! Optional goodness. Added onions while browning then after about 2hrs added carrots,12oz beer and 12oz water, 1/2 T more of the bullion, 1/2 hr later potatoes, seasoned salt and pepper to taste, more water just to cover veggies, cooked about another 1/2 hr until they were done. YUMMY!!!

    CharleneWithrow mine too until I realized she grabbed the beef base with her fingers, rubbed it on one side of the raw meat, reached those same unwashed fingers into the base once more then rubbed the base on the second side, now her jar of base is contaminated. However the roast does look good. Just wondering where the mashed taters and gravy are.

    @To Release is To Resolve We theoretically know and realize it is a false sense of being safe by cleansing the meat. During this day and age, I consider it to be a ritual I learned from my parents. Cleansing the meat with whatever you have on hand such as lemon, vinegar, or water to kill parasites. This is especially true for those of us that have hunted game or fish

    You are blessed to have an active sweet mom. My mother in law is 87 now with no pills and in good health. She doesn't cook AT ALL and of course doesn't clean or do anything around the house. Why some woman are so active in they old age and others are not!

    We are used to pro actors on cooking shows pretending to have a life altering experience when they bite into a fancy looking dish. When something tastes amazing, a guys go to is usually, mmhm, and silence while he eats as quickly as possible. Not to say he couldn’t have done a bit more to convince the audience, just sayin, silence speaks greater than words for dudes when it comes to food. A bit hard to read sometimes.

    I forgot about this way to cook a pot roast!! My sister showed me how to do that in the 70's. used to love the way it turned out. Can't get that from an instant pot. We gave up flavor for convenience sake. Microwaves and instant pots are great but stove top pot roast is heaven. Also about half way through add halved potatoes and carrots and it's a piece of heaven.

    Thank you for this recipe. 60 years ago my mom made pot roast with a more square roast, turning to a new side every 15 minutes. Cooked it in a lightweight aluminum pot with dents in it. Every roast she made was excellent.

    My mom too! We don’t know the name of the cut. She made gravy & put over egg noodles. On the side, wedges of ice berg lettuce with thousand island dressing (ketchup and Mayo). Family meal for 40 years. It was the square pot roast you describe. Trying this recipe on video tomorrow. Looks fantastic! And easy.

    I get tons of compliments when I make this roast. It’s the best I’ve ever made and had. Crock pot roasts are the ones I’m most familiar with before this. Cooking with the crock pot, you end up with a dry roast with tons of juice left over. You then have to make gravy to put back on the meat to get flavor and moisture out of your flavorless dry hunk of leather. In this recipe, I love how the juice is cooked back into the meat on low. The result: Moist soft meat that is very flavorful. Leftovers for gravy are still there too if anyone wants it. Good job Ma and Son.

    That's the same bouillon paste I use. LOVE your momma! I use her lemon meringue pie recipe! Sooooo good! I am so glad I found your channel Chef Buck. I am passionate about cooking and learned from my mom, dad, aunt and grandmothers (dad and his mom Southern cooks from SC.)

    I just got done making this and I have to say it is soooo tender and so flavorful! I didn't have the bouillon paste so I used a bouillon cube in a tiny amount of water after searing it on both sides. 10/10 hell yes! Make this, you will NOT be disappointed! Thank you so much for sharing this!

    My mom always cooked hers on the stove,and so do I. But I add onions, garlic, seasoned salt and black pepper and make gravy for mashed potatoes! Also have veggies on the side.

    I use a can of cream of mushroom soup (plus a can of water), an envelope of dried onion soup, some sliced fresh mushrooms and a sliced onion. That makes a goodly amount of delicious gravy that I use with anything! I even freeze a little for use later.
