My day spent in Patisserie Yann, Abylimpics pastry world champion.

Sweet pastry recipe for the Parisian flan:
Butter: 175g
Icing sugar: 85g
Flour: 280g
Almond powder: 35g
Salt: 2g
Egg: 45g
1/ Cream the butter and icing sugar
2/ Gradually add the warm eggs
3/ Add the flour, ground almonds and salt
4/ Cooking at 160°C

I live in a very small village in the north of Scotland and the nearest bakery is over 2 hours drive away……but if they made gorgeous treats like these, I’d spend every day going back and forth to buy them! They look amazing and the variety is amazing. It’d be worth going to France just to buy a selection of these gorgeous goodies!

I went to pastry school in the usa, for a job to do this. It is a shame that people in the USA do not demand this excellence and would rather have Pillsbury dough products. This video has given me hope that one day the USA will have a high standard for Pasties too! Thank you for the video!🙏😃

I agree. I am a baker and sadly, many Americans do not appreciate a good pastry. They complain about how "fattening" they are while sucking down their giant Starbucks sugar bombs.

You are right. I'm guessing in a big city like NYC or Chicago they may have a pastry shop...but nothing like Europe Im sure. I know from when I went to visit my then Mother in law...in Bournemouth England...I definitely supported the local patisserie shop in Bournemouth....a lot! Lots of treats. But one thing the lady made, was a pizza. Oh my lords! Brought me back to Junior High school in the 1970's!! My gosh.. it reminded me of our school pizza. It was SO delicious. I never could replicate that. Needless to say, I had 2 slices of a delicious flat pan pizza....every other day or so while there. And other treats. The patience they have to create such wonderful treats....beautiful edible works of food art! 🙂

You won't find good backers because unfortunately Americans forgot their French roots...America is utterly based on mass production over artisanal, not comparable to France.
My Austrian Grandmother was a world-class pastry chef, at home, after WWII, when hazelnuts and almonds, the whole cream, chocolate, lemons, fine flour and white sugar became available again in the '60s and '70s. (Linzertorte, Sachertorte, all the holiday cookies, Apple strudel from scratch every Saturday: you name it she baked it in her tiny Graz apartment electric oven or the wood-fired iron one in her summer home in a small village outside Vienna.) Watch this makes me so happy and grateful: You are carrying on these beautiful pastry traditions! ☕️ 🥰🥐🌍

Many years ago I had the good fortune to spend an afternoon in a patisserie in Aix. My French is very limited, as was their English but cooking is universal. I mostly tried to stay out of the way and learn. Absolutely loved it, wonderful people and stunning pastries. I'd be 400 lbs if I worked in such a place full time :)

En tant qu’ancien ouvrier pâtissier, en France je n’ai jamais gagné plus que le smic. Même ici au Canada, on m’a donné $13 de l’heure (ça fait 9 euros). Tout fait maison. J’ai quitté le métier, dégoûté. Franchement que les types vendent du surgelé j’en ai rien à foutre. La paye est tellement nulle que j’aime autant qu’une machine fasse les gâteaux. Se taper un CAP pour au final gagner des cacahuètes en se levant à 3h du mat c’est dégeulasse.

@@xavytex mais le soucis, il vient du fait que t'as tjrs bossé pour les autres.. travailles pour des cacahuètes au début pour gagner en savoir faire.'. et après lances toi mec. Il y a des gens qui gagnent des sommes pas possible en ayant pas le quart de ton savoir faire...

Dunkin bakes and decorates their stuff this same way in most of their stores - the difference is in the quality of the product and variety.
