Mbongo Tchobi - Cameroonian Spicy Black Stew - Precious Kitchen - Ep 12
Mbongo Tchobi is a spicy black stew typically eaten by the Bassa people of Cameroon. Its deliciousness has made it gain popularity in other parts of the country. The key ingredient is the mbongo spice, from which the stew derives its name.
INGREDIENTS
2 large fish of choice (I used tilapia) about 2 pounds
4 teaspoons ground mbongo spice
30 seeds njangsa
2 seeds African nutmeg (Ehuru/Pebe) peeled
3 small seasoning cubes (Maggi)
1 1/2 teaspoon salt
2 large tomatoes (or four small ones) roughly chopped
1 large onion
1/2 celery stalk - chopped
1/2 stem of leeks - chopped
7 garlic cloves- peeled
1/2 inch ginger root - peeled
1/2- 1 cup vegetable oil
1/4 teaspoon white pepper (optional)
1 habanero/hot pepper (optional)
2 stems green onions (optional) for garnishing

Cameroon has the bestest food ever in the African continent... Morroco and Ethiopia is good too. But in Central-west Africa.. Cameron is the best. By far the best. Nigeria is loud about everything so Cameroon never gets its due...its.one of the silent countries..but they have so much to offer in food and music..if ever anyone tastes Cameroon food..thats it! No going back. They really spend time in cooking. Their achu, ekwang, their way of food is excellent. Their priority is food so 😄

Thank-you so much. I have been teaching myself to cook from different states in Africa, and I was meeting someone from Cameroon and decided to make something for him from 'home'. He was extremely surprised when I presented Mbongo Tchobi with plantain fufu. I live in the Netherlands and it took me quite a while to get the Mbongo spices... they finally arrived. Mine did not look as black as yours, and I think it may have been the tomatoes I used.... nevertheless my new found friend was blown away. Thank-you so so much. Such a beautiful dish! Precious, our men should off their seats and couches and get into the kitchen for and with their ladies you know. That foolish habit of waiting for food to appear magically on the table, my wonderful mother didn't teach that. So I enjoy the kitchen and it's good have recipes like yours that force me to check my technique time to time. At the end of the day if she is "insanely pleased" well you know I get the benefits back ;)

This is by far my favorite meal ever. I’m American but lived in Cameroon for two years and I’ve been making this frequently over the past year. There’s no other meal I’d rather eat than this! I don’t care if it’s Chinese, Mexican, Indian, or German, no other meal comes close to touching the glory of Mbongo Tchobi. Thanks for showing me how to do it! P.s. my Mbongo dealers on Etsy and Afrilege have stopped selling Mbongo. Anybody know where I can buy it?

Depends on where you live. In Maryland there are lots of African stores that sell the spice. Try a google search for an african or carrib4an store near you. You never know you might get lucky

My hubby's family is Mayan from the Yucatan Peninsula and they have a similar dish with turkey meat and balls of ground beef and pork mixed together called Relleno Negro "black filling"

Jacky Heartbeat sorry for the late response dear. No, they are not the same thing. African nutmeg is what is called "pebe" in Cameroon.

Erin Kelly I would say grind them all together then measure out the quantity needed for this recipe. Keep the rest of the ground spices in an airtight container. You could freeze it too if you so wish. There's a link to the full recipe in the description of the video. Hope this helps!

omogenaija1 you press it down onto a chopping board then you run your knife through the middle to create a cut. Note that you need a bit of force before it opens. Now, when you cut it, use. your fingers or a small knife to seperate the shell from the seed. Hope this helps.

Judith Tessah the brand of my blender is "Ninja". You can get it from supermarkets depending on where you live. You can also get it online from amazon.com.
Fun fact: mbongo tjobi isn't supposed to be black, all the Bassa grandmothers would tell you it is brown, is just people who overburn the ômi and the mbongo

My husband is bassa and his mother and grand mother cook black Mbongo Tchobi. In fact, there's a brown soup that is cooked with mbongo Tchobi spices + peanut and it looks like Mbongo Tchobi. That is where your confusion comes from.
It will be good if we can get exactly what the spices are. Not present us the ground one please
