CAMEROONIAN FISH STEW // Fish Stew Recipe // African Fish Stew // Tomato Stew
This Cameroonian Fish Stew and rice are a match made in heaven! This is a great recipe for weeknight dinners or for the weekends. Add some sweet fried plantains on the side and you'll be in heaven!
I grew up eating different kinds of tomato stew with rice. There are various versions made with beef, chicken or fish. You'll love this African Fish Stew! I used a kind of fish I get from the Asian market called "round scad". But you could use mackerel or any other fish you have on hand. Hope you enjoy this Fish Stew Recipe!
Ingredients Needed for Fish Stew
2 medium whole firm fish
8 medium roma tomatoes (extra ripe)
1 medium onion - chopped
7 garlic cloves
1 inch ginger root (peeled)
3-4 sprigs basil
1/2 teaspoon ground white pepper
1/2 teaspoon salt
1 cup neutral tasting oil (like vegetable oil, canola or corn oil)
3 Maggi cubes
1 habanero pepper (optional)

Some of my ancestors are from Cameroon and Congo :) (All them Southern Bantu tribes)
Hmmm rice and stew is present in almost every household in Cameroon sometimes plain without fish or meat. But this meal is affordable and easy to cook. Hey you better bring back dat head fish oh...my best 🥰

Fresh tomatoes stew is bae. Love it with spaghetti. In Cameroon this fish u used is what we call mackerel (mackero) though mackerel is actually different. Up to date its my favorite fish. I hate the real mackerel, it looks like snake to me. I don't even eat it. Thanks lady P. Stew on my menu tomorrow.

That looks delicious but how do you cope with the bones from the mackerel?
African queen, loving your earring. Thx for sharing this mouth watering recipe. A little feedback to improve on your amazing videos would be to try to make them a little shorter around the 10min or even less mark. There are some steps that could be skipped and explained e.g the spice blend, pepper, Maggi and additional water steps took close to 3 minutes could be done in one step and explained. Thanks for sharing these wonderful recipes with us and I can’t wait for the next one❤️

Hi, yes it will.
I normally start with less oil and then add olive oil during the process to get that angry boiling.
Question sometimes the tomatoes are sour when you fry it, how do you make it not sour? Thanks in advance.

It means they not properly cooked . Try fry your tomatoes on medium heat till they stick to the bottom of the pot. Don't forget to stir so it doesn't burn

A myth! Our granny's in Africa used cubes till the end of their lives in their 90's upward years. No cancer nor any sickness at all. We are not going to eat tasteless food at all. What is food with no Maggi? Unless it's Koki or Nkwi. Ur advice appreciated though and well received.
