I grew up on Mangu, I do not remove anything from the plantain. I saute onions, bell peppers, garlic in Avocado oil, throw the soft platanos into the mix and mash.. man o man. I place the fried eggs over it and with an Avocado on the side and go to town..

Me too, I use butter as well.
