As a Dominican, I approve this video. You may also add olive oil to the mangu. This recipe was more like 10 golpes. Amazing!

Puerto Rican here and I will also chime in that plantains are a cornerstone of CARIBBEAN cuisine (if you're also wanting to include places like PR, DR, and Cuba).

Dominican here (born and raised and living in DR). I'm super happy to see my country and culture represented. Plantain in all its forms is one of my favorites things to eat at any part of the day. Just a few pointers: When the plantain is boiled with the peel it changes the flavor of the plantain. It's better to peel the plantains then boil them. To pickle the onions, we just put the min vinagre. And the guarapo de piña, most people (if not all) just use the skin of the pineapple and we leave it in water for about a week to allow it to ferment. The ratio of mangú (smashed plantain) should be higher because it's the main part of the dish, but I guess the proportions are the American way... but I'm not mad, if I receive that plate with that much cheese, eggs and salami I'll be overflowing with joy.

Great video, happy to see our culture and food celebrated. Just one nitpick, I feel it’s more accurate to call plantains the cornerstone of Caribbean cuisine, not necessarily South American cuisine. It is eaten in South America to varying degrees depending on the country, but it in the Caribbean it is ESSENTIAL!
As a Dominican i give this 5 stars!!!!! just a pro- tip add a bit of cold water to your Mangu to keep it from drying out if you will not eat it right away

Thank you for highlighting my country. Couple of things: First, when pickling, you don't use sugar. It's a salt and vinegar mixture. Dominican Republic is Caribbean not South American. Did you keep the skin on the Plantain chips? Please no. 😬 A drink that would have been better would have been a morir soñado or something with Passion Fruit.

Def would recommend aceite de oliva like others said, as it helps add another level of flavor to the mangu. I would also recommend trying to make jugo de chinola helado, or frozen passion fruit juice as it goes great with the tres golpes as well

I used to make Mangu for my mother in law all the time whenever she came to visit my wife and I.The only item i would leave out was the fried cheese since she said she was intolerant to it, then instead of salami i would use smoked sausage because i couldn't find Tropical or the more traditional salami brand,Induveca.I don't typically like making mangu for myself,but i do enjoy making it for other people.
The greatest thing about the US is diversity and this a great example of it. I'm Dominican and it makes me extremely proud to see Senpai Kai sharing our breakfast with the world. Long Live the US!!!!!!

I used to work for a Major League Baseball team and we always had this as part of the breakfast options. I’d usually grab fried eggs, salami, and fried cheese, and throw it onto a bagel

Fantastic breakfast, bro did the plantains right, but I would highly recommend cooking those store-bought sausages more, you don't risk eating uncured sausage rare or medium rare unless you made them yourself using ingredients that you know were cared for properly from harvest to your hands.

Some people say the trick to have a smooth mangu it's adding cold water, but you can also add some milk to make it extra smooth ❤

As a domincan i love the representation. This is easiky my favorite comfort meal. Only complaints are youre missing some concon, and too much avocado. And your tostones method isnt how we make it. At least in my region. The texture is different with your way.

If you like a stiffer mangu, add some ice water!!!! It'll seize up some of the starches for a bit of a thicker consistency.
Mangu looks like you can add it to noodles.

He didn’t boil them. He added the plátanos to a sauce pan full of oil to fry. Similar to a deep fryer. I thought he boiled them too at first but I rewind and saw it was just oil. 😊
