The milling process involves splitting the barley husk and grinding the starchy endosperm into small particles.
The husks can be used to form the filter bed during wort separation. The endosperm must be broken down to allow the enzyme action during mashing.
The two main objectives of milling are: Particle size reduction (for maximum extract recovery) and particle size control (for optimum runoff speed).
