Pasteurization - How to calculate Pasteurization Units (PU)?

To calculate PU, multiply the time (minutes) by 1.393 raised to the power of the temperature (°C) minus 60°C. PU = t * 1.393 ^ (T - 60).
While some brewers may choose to forgo pasteurization, the process remains an important tool for ensuring the safety and quality of the final product. Most beers are safe to drink even without pasteurization, however products such as low-alcohol and non-alcohol beers should almost always be pasteurized.
The brewing industry typically measures the amount of pasteurization needed using a unit called Pasteurization Units. PU are employed in rating the effectiveness of pasteurization processes for beer. One pasteurization unit (PU) achieves a certain reduction in the number of microorganisms that occurs in a beer held at 60°C (140°F) for 1 minute. To be able to calculate the PU we need to know the holding time in minutes, and holding temperature in °C.
