Chocolate can be a lot more than a sugary candy bar. It comes from cacao but even that's confusing. Are cacao and cocoa the same thing? Today we're learning from the master chocolatiers at ChocolaTree how to turn raw cacao beans into 100% pure chocolate.
This isn't like any chocolate you've ever tasted and it's not nearly as bitter as you'd imagine. Rich and decadent, this chocolate is meant to be savored and appreciated one piece at a time. It is even said that chocolate this good has many medicinal (and even magical) properties.

I met the old man in this video during the early days of my life, lots of fun times with regards to our chocolate adventures. I can say with 100% accuracy and confidence that he is a top tier chocolatier or a chocolate master and thus very intelligent/smart with regards to things related to chocolate from start to finish.

@@jessicahickam5218 *snort* I changed his diapers a few times when his mother (my sister) wasn't available. He's my parents first grandchild...named his own chocolate company -- Fortina -- after my mother, in fact ("For Tina").
I absolutely love chocolate! I saw your other videos and would love to learn what equipment I need to really start making my own chocolates on a commercial level I'd like to use as little extra Ingredients as possible and make them really healthy but delicious. I just don't know where to start and if I can skip the fermentation process and just buy the nibs and everything to just put into a tempering machine? Anyways, would love any help in that direction, thanks for sharing!
I have been using “Viva Naturals” Cacao Powder Organic. I hear the term raw being used with relation to the proper type of cacao powder, but my package does not actually have the word raw in writing. Can someone tell me if this is a Rob version simply by the fact that it is labeled organic? Thank you.

My late father used to make Cocoa powders himself,and the original pure powders was sooo bitter,and he also used to make chocolate in his own style and method of cooking and baking.very3 yummy even though not modernized style of cooking and baking,but very7 gooooD chocolate and original raw cocoa powder.😎👍👍👍👌♥️♥️♥️

We grew up having hot chocolate from cacao, not powdered in the Philippines. Find it weird when powdered chocolate from the US identified it "Real Chocolate" CAN'T taste the chocolate at all. Pretending to be a chocolate. 😂

idk im not a medical professional but in modern chocholate that isnt 100% adds a whole bunch of things even with 100% most industries will add a little something to keep the form of the chocolate bar brining the percent down to 99.97% but they stil round it up because its close enough... i'd say take a look at the ingrediants in the chocolate bar and try to get yourself tested to see if its actually chocolate your allergic to because its quite a rare thing to be alergic to. like if you can remember what chocloate you had an allergic reaction to you may have better results finding out what you cant have

There is a recipe that it's been pass generation to generation on a very small hand full of people of Mayan descent, the same way my Ancestral did to us in many uses of Corn & Coffee and so many others things. Sugar destroy the good composition of Coffee and Cacao specially when added to a hot drink

@@geronimopascuale9208 I've been doing cacao powder with cayenne pepper and cinnimon mixed into room temperature spring water first thing in the morning on an empty stomach...is that a good way to have it, or maybe fermented into a wine or something?

Chocolate Tree is the favorite restaurant in Sedona, AZ on Route 89. Everyone can not only direct you to it's location by Thunder Mountain, but they can also tell you how wonderful the food, chocolates, and ambience is - especially the wonderful patio.
It is disingenuous to call this a raw product. The beans are roasted in order to separate the hulls and drive off the residual acetic acid compounds created by fermentation. Raw beans are light brown/reddish and the dark brown color of their nibs comes from roasting. It is also deceiving to say it is 100% cocoa if it is sweetened. Typically 20% or more sugar even in the darkest eating chocolate.

@Annia Medina Raw beans have residual acetic acid(vinegar) from the fermentation. When you start roasting you can smell the acetic acid. I have eaten a few raw fermented beans and they are barely edible. I spat them out.

thats a lie!!! 3-4%?!?!?!?! more like 50-60%. why lie just to promote your own product. and who cares what the lier is or isnt willing to call the product. its cocoa and stop with the cacao bullshit already.
