Lemon Posset was one of the Queen's Favourite desserts, and the lemon posset was served at her wedding with Prince Philip. The Queen had quite a sweet tooth, and Lemon Posset was regularly on the menu at Buckingham Palace.

Lemon Posset is an easy dessert to make, requiring only 3 ingredients: lemon, cream, and sugar. The tanginess of the lemon contrasts with the sweetness of the cream and sugar to create a wonderful flavour. We hope you enjoy making this delectable treat.
We used 35% whipping cream as that's what we have available here in Montreal. In the UK and Ireland you would use heavy cream, which is 48%, we believe. In other places whipping cream might have a higher percentage. Any of these work just fine!

INGREDIENTS
- 2 large lemons
- 2 cups heavy cream*
- 2/3 cup sugar
* We used 35% whipping cream as that's what we have available here in Montreal. In the UK and Ireland you would use heavy cream, which is 48%, we believe. In other places whipping cream might have a higher percentage. Any of these work just fine!
DIRECTIONS
- Start by zesting the lemon with a microplane or fine grater.
- You’ll need 1 tbsp of zest.
- Whether you need the zest of 1 or 2 lemons depends on how finely the zest is grated.
- Slice a lemon in half and juice it.
- Whether you need the juice of 1 or 2 lemons will depend on the size of your lemons and how juicy they are.
- You need 6 tbsp of lemon juice.
- Pour the cream into a pot.
- Then add the sugar and lemon zest and mix until the sugar has dissolved.
- Place the pot on medium heat and bring to a rolling boil.
- You need to be attentive to make sure the cream doesn’t overflow because it heats up very quickly.
- Stir occasionally.
- After 8 minutes, remove the pot from the heat.
- Measure exactly 2 cups of liquid into a measuring cup.
- If you’re over two cups you can boil it a little more to reduce it.
- If you’re under you can add a little extra cream into the measuring cup.
- Return the liquid to the pot and add the lemon juice and mix well.
- Leave to rest for 20 minutes.
- While resting a thin skin will have formed over the liquid, so you need to strain it.
- Straining also removes the lemon zest and gives a smooth texture to the dessert.
- Don’t press into the strainer as you don’t want to push the skin back in, but you can lightly jiggle the strainer.
- Now it’s time to pour the posset into containers.
- Fill the cups while the liquid is still warm.
- Be sure to leave enough room to add some fruit.
- If you see any air bubbles, gently tap the cups.
- Place in the fridge to set for at least 3 hours.
- Take the cups from the fridge to temper at room temperature for 10 minutes before serving.
- Garnish with berries.
- Blueberries are a popular choice, but including a strawberry makes it prettier, and adding some mint leaves, prettier yet.
- Your lemon posset is ready to serve.

    If you're not royalty, just put the pot in the fridge after it cools down. 1 hour later, take it out, get yourself a big wooden spoon and plant yourself in front of your TV, dig in. Wooden spoon is to prevent scratching noises at night so other dwellers in the house won't wake up and ruin your night.

    Funny thing. This can be easily turned into a cold lemon pie. Just make a base of buttered roasted graham cracker base, pour this on top and chill. Makes a perfect summer lemon pie. Can also be made with limes (I prefer it).

    @@GuillermoandSarah I've learned it from a Colombian girlfriend, the original version of the desert is called "Carlota de Limon" but they also make a simplified version called "Postre de Limón Simple" as in Simple Lemon Desert. My ex just used to prepare the very same posset you demonstrated. Make a base of finely crumbled Graham crackers, toasted in butter with honey and using that to create a base in, allowing it to cool then she would pour the posset over the base, and let it chill for a few hours. I still make it as it's a very easy and impressive recipe.

    I made this and it was wonderful! This came on my feed like my device knew what was in my refrigerator. I even have a pot of mint outside. It brightened my August day and I had to take some to my neighbor, after her 8 hour shift. I love that it's only 3 ingredients. My head gets lost when a recipe has too many steps and ingredients. It's so smooth, creamy and tangy. I did contemplate less sugar because I try to avoid it. Doing that wouldn't work because it's perfect.

    This reminds me of a sort of custardish recipe my Nonna used to make but she didn’t use the peels. And no crust. It was just baked in a casserole dish and we would eat it with fresh whipped cream. Sometimes she added Limoncello. And in the winter she made one with clementines with Sambuca.

    I am making this at moment tastes lovely, I added lemoncello 1/4 to 3/4 lemon juice will leave overnight and decorate with raspberries, my practice for making it at Christmas thank you

    it was fab , i realised my fresh cream pot was not enough for your recipe so i mathematically sorted it out, made four very small dishes of it but due to the richness it was enough and everyone enjoyed it and yes i am from wales :) thankyou for great recipe :) @@GuillermoandSarah

    @@maureenwales good for you. It's true, it's very rich and you don't need a lot! We need to visit Wales someday. I've just been across part of it by bus a few time to reach the ferry to Ireland. We follow a Welsh chef on KZread named Gaz Oakley. He's a vegan chef and a gardener and it's very relaxing watching him tend his gardens and cook in the countryside.

    Yum Yum...I bake for days... hrs gingerbread houses for autumn/winter family gatherings. Although I usually decorate with the finest chocolates and toffees, It just isn't complete without a flute of lemon posset or mousse. A block of disassembled gingerbread house chocolates atop makes for a happy crowd :) @@GuillermoandSarah

    I didn't serve it with gingerbread house, but I did buy some thin ginger cookies. I crushed some to make crumbs to sprinkle on top before putting on the blueberries, then stood a whole cookie in the posset. The ginger does go nicely with the lemon and berries.

    Boling the cream seems way too harsh to denature it, I think keeping it at 170 F for 5-10 minutes should be enough

    What happens if you let the heavy cream cool and then whip it to become more fluffy? I always melt chocolate in heavy cream on the cooking machine, let it cool and then whip it to make mousse au chocolat.

    I will try this as it looks yummy! I have a lemon tree that currently has at least 10 lemons ripe and more not ripe yet. Actually think I will be making several lemon desserts! I enjoyed the history while you cooked. I also wanted to tell you after reading comments that not all Americans are rude. I'm sorry you encountered them and bravo to all of your polite comments. People, this lady is sharing her cooking experience with us. Not all countrys make, name dishes or even eat the same things using the same recipes. If that were the case the world would be boring in my opinion. If you think the way she makes this dish wrong then don't try it. Find another one you think is right. I don't understand why you can't keep your negative attitudes and comments to yourselves. And yes, I should have probably kept all of the above to myself but some days the human race just blows my mind! Was I the only one raised with " if you don't have something nice to say, then say nothing?" Its not pudding, its not cheesecake, its not suppose to be thick, its Posset!

    @tracys.6033, that's very neat that you have a lemon tree. Where do you live? In Florida? A lemon tree is very exotic for me, but not for Guillermo. His parents used to have them, in Mexico. I was touched by the fact that you replied very politely to each insult. That's the way I was raised and you just don't come across many people like that anymore. Funny you mentioned Florida. I was born in Florida but now live in Virginia. I'll tell you my lemon tree story. About 3 years ago while visiting coastal North Carolina (Beaufort NC- my happy place!) I found a Meyer Lemon tree at a nursery. Purchased and drove it 5 hours home. Planted in container. Left in container and I bring inside in winter as I wasn't sure if it would survive outside winter. Research was conflicting. Back outside in spring. No lemons first 2 years. This year however my little 4 foot tree has so far given me 13 lemons and is still full of unripe fruit. I have already brought inside for the winter. This became such a challenge for me to do because everyone told me " I can't believe you bought that. No way will you get it to produce fruit." Obviously, I couldn't be happier! I will subscribe to this channel as I don't do Facebook. Thank you again for your kind words.

    @@tracys.6033, it's really great to hear that you were touched by our replies. It's challenging with a KZread channel because you are sort of on your own, putting content out into the wilderness, and you don't necessarily have much of a connection with how people are receiving it. Sometimes we see friends or acquaintances at a party (a rare thing for us these days!) and they tell us they watch all our videos, or they made a recipe, and it's amazing to hear, because we really don't know who is watching us! People can be very rude. Honestly I notice it more as a pedestrian walking around our neighbourhood than I do here with the comments. At least it aggravates me more. People don't feel compelled to stop at pedestrian crosswalks anymore, even though it's the law to do so, and even if you have a kid with you!! We have a good friend here in Montreal who's mom lives in Virginia. Do you have some lights to shine on your tree? That might help it. There are special ones you can buy to shine on your plants through the winter that mimic daylight. Thanks for subscribing to our channel!

    In the sense of the custard pudding? Sorry British people use “pudding” in more contexts so I’m not sure. Yes I suppose it’s similar to the custard pudding but its much softer and doesn’t set the same since it has no eggs. It doesn’t wobble 😂

    @@argeebargee a friend of mine was showing me Monk Fruit sweetener yesterday. It's natural and delicious and I think it would great as a sugar substitute for this recipe. Not for this recipe, but in general dates, bananas, and apple sauce work well.

    @Ab Magno, did you make it and it curdled? It shouldn't curdle, but it could depend on what cream you're using. Which country are you in and what kind of cream are you using? I read that it can happen if you have an extraordinarily sour lemon. I also read that it can help if you evaporate the cream first. But not sure about that process. You could research it online.     ​@trulymine9470 hey there! I tried this recipe and it's pretty fool-proof regardless of the exact measurements. I add as much sugar as I like to ~16 oz of cream, and a ~ 2-3 tbs of lemon juice or more, depending on the tartness I want that day.

    @use-hustlelucre, it is actually quite astonishing how many millions of people in the world do care. We never would have had the success with this video (over 100,000 views) without mentioning the Queen. We made it around the time of her Platinum Jubilee celebration last year and this year close to the time of her death it has exploded. I can't see "Women's Wedding Dessert" flying at all. It was also eaten by Prince Philip btw.

    @@GuillermoandSarah Great achievement for you I will say, however ideally it wasn’t possible until you practiced it enough & then came up with ideal taste of this dessert, it’s your generosity that you want to offer your efforts to the queen, however to me it’s a desert made by someone who gave it all in it & decided to offer its intense work to offer a women with some position at her wedding.
