The Lebanese baked kibbeh - commonly known as "kibbeh bil sanieh", meaning kibbeh in a tray - is a family favorite across Lebanon. This delicious, authentic Lebanese dish is essentially composed of two layers of kibbeh separated by a filling (or hashweh, in Arabic) made of sautéed ground beef, onions, pine nuts, and spices. طريقة تحضير كبة بالصينية بكل تفاصيلها واسرار نجاحها
Duration: 60 minutes of preparation + 60 minutes for baking at 420 °F on lower rack (tray is covered with aluminum foil for the initial 30 minutes)

تكفي لعدد عشر اشخاص
A. Ingredients / المواد:
i. Kibbeh Dough / الكبة:
- 1 kg beef stew / كيلو لحمة بقر
- 3 cups brown bulgur no. 1 (washed and soaked in 1 1/2 cups of cold water) / ثلاث اكواب برغل اسمر رقم واحد مغسول ومنقوع بي كوب ونصف ماء بارد
- 1 medium onion / بصلة واحدة حجم وسط
- 2 tbsp olive oil / ملعقتين طعام زيت زيتون
- lemon zest / برش حامضة
- 4 basil leaves / اربع اوراق ريحان (حبق)
- 1/2 tbsp dried mint / نصف ملعقة كبيرة نعنع يابس
- 1 tbsp marjoram / ملعقة طعام مردكوش
- 2 tbsp salt / ملعقتين طعام ملح
- 1/2 tsp cinnamon powder / نصف ملعقة صغيرة قرفة ناعم
- 1 tsp black pepper / ملعقة صغيرة بهار اسود
- 1 1/2 tbsp kibbeh spice (or allspice) / ملعقة طعام ونصف بهار الكبة او بهار حلو ناعم
- bowl of ice water and ice cubes (to help knead the kibbeh dough) / كوب ماء بارد مع ثلج لعجن الكبة
- 1/2 cup olive oil (to drizzle over the surface of the kibbeh before baking) / نصف كوب زيت زيتون لدهن وجه الكبة
ii. Sautéed meat and onion filling / الحشوة:
- 700 g minced meat / ٧٠٠ غرام لحمة مفرومة
- 1 tbsp ghee / ملعقة طعام سمنة
- 1/3 cup vegetable oil / ثلث الكوب زيت نباتي
- 50 g pine nuts / ٥٠ غرام صنوبر
- 3 medium onions / بصل عدد ٣ حجم وسط
- 1/2 tbsp salt / نصف ملعقة طعام ملح
- 1 tsp black pepper / ملعقة صغيرة بهار اسود
- 1 tsp cinnamon powder / ملعقة صغيرة قرفة ناعم
B. Utensils / لوازم الاستعمال:
- round baking tray (36 cm diameter) / صينية مستديرة قياس ٣٦ سنتمتر

    What you are doing is beautiful I just hope I can come near to what you are doing I grew up next door to a Lebanese family and learn to Love the food when I was a young man I'm 63 years old now and I can't get enough of it thank you for your beautiful video

    This is exactly the kebbé my mom used to make. Mine crumbles and falls apart when I serve it. So I will follow the instructions given on this video . Thanks

    I made it today it's wonderful but you need the right flatbread and tabbouleh or is just meatloaf with a different flavor but it is wonderful thank you for your recipe

    Hi..why did you use the lemon zest plz?also..when I make kibby hi sineyey..it turns out so soft but I don't know why?should I squeeze the water out of the burghul?thank you..your kibby is so beautiful!

    My friend's father came here from Lebanon fleeing the oppression from the Muslims he got here when he was 10 years old he joined the military when he was 15 he fought in world war II and the Korean war he was a three-time decorated war hero his sister started Emily's Lebanese deli while he was still at war anyone wants to talk s*** about people that came from overseas can go to hell Emily's Lebanese deli is a landmark in Minneapolis or what's left of it
