Homemade Ashta Recipe
Ingredients:
4 Litres/1 gallon whole milk
!/2 cup white vinegar
1 cup cornstarch
Orange blossom or rose water optional
Instructions: In a saucepan put 12 cups of the milk and place it on the stove set on medium low. Right before it starts boiling add the vinegar. Stir until the water turns translucent. Drain the clotted cream putting it through the sieve or you can also use cheesecloth. In a separate saucepan mix the remaining 4 cups of milk with the cornstarch and mix before you put it on the stove. Cook on medium low until it thickens. Add the drained cream/cheese and beat it together with a hand mixer. Place in a bowl and cover and place in the fridge. Use in dessert recipes or you can just eat it with some sugar or sugar syrup, sprinkled with pistachio. Enjoy

    Hi Tina! Thank you for this recipe. Back when I lived in Los Angeles, I used to drive about 40 minutes to go to my favorite Lebanese restaurant to buy ashta. It’s been 8 years since I moved away and now finally I have a whole tray of ashta all to my self thanks to you! I added 4 spoons of sugar, rose and orange blossom water. Serving with honey, chopped pistachios, sliced bananas and strawberries. Perfect 😋

    You are so adorable 😊. Love the taste test ! Perfect timing I have 2 litres of expired milk that isn’t bad but the boys refuse to use it lol! I was going to make yogurt but I’m doing this instead!!! So so good! Love it with fresh berries too! TFS my sweet friend, I’ll never have to buy it again 😘

    I've never tasted real clotted cream before Tina, but yours is looking so yummy! I don't know if I will try making it or not, but nice to know that if I want to, I have a go to video and recipe to use. Thanks so much. Hugs, Brenda

    Great recipe and instructions. I've been using these instructions ever since I found this video. The only difference is I add about 1/4 cup of Splenda along with the rose water and orange blossom.

    My mom makes the quick recipe for clotted cream, (ashta). But she only uses milk, heavy whipping cream, and corn starch. No vinegar. And it's a much easier recipe. She puts a gallon or half gallon of milk to boil, (leaving a cup to use later in the recipe) on a medium heat. And than adds a few about 4-5 tablespoons of cornstarch to the cup of milk that was set aside, and mixes it very well. Than she adds it to the milk that was boiled. As she adds the cornstarch mixture, she quickly starts mixing with a whisker nonstop, otherwise, the cornstarch mixture might become lumpy. And once it's all blended, the mixture thickens. You can put on a flat plate or whichever plate of your preference. Let it cool on the counter and put in the fridge. It's delicious and you can use for desert recipes or eat it with bread and honey, etc. ❤

    It's only been several years that I started eating yogurt with stevia sweetener. Forget cottage cheese... ricotta cheese. The textures just make me gag, as does the visual... hahaha.. I don't even do whipped cream. But nice that you can make this for your family, and that they enjoy it. Guess it all comes down to culture, heritage and how you were raised.     Ooooh, I may have to try your recipe to see if this version of clotted cream works with scones and jam (the texture looks perfect)!! It's difficult to find a recipe that doesn't involve baking cream in the oven for hours... Is it a mild taste, or does it have a bit of sourness (like yogurt) because of the vinegar? TFS 💖

    U will not even taste the vinegar, it’s weird it’s as if u never used it lol. Yes my hubby eats it with scones and jam, me on the other hand since I’m middle eastern lol, I put some orange blossom or rose water, then I add some honey and have it like pudding 😋. TFW Frances and Happy New Year 💖

    You can add it when your mixing it with the hand mixer or u can add it afterwords it doesn’t really matter. TFW 💖

    I wonder if you can use cottage cheese or ricotta cheese instead of curdling the milk and then follow the recipe the same with with milk and cornstarch. Anyone tried this?

    a g it’s very similar in texture. The ricotta is just milk and acid where clotted cream there is added starch which makes it creamier. TFW hun 💖

    No, Ashta is not sweet. You can put sugar, honey or whatever sweetener you like when you want to eat it. Hope this helps 🥰

    This looks like a delicious creamy dessert but it's not clotted cream. It's more of a paneer(cheese) mixed with a white sauce. I wonder if the confusion is around the name 'ashta'. It seems that there are different types of ashta depending on where you are from in the Middle East - same name different product. I've just seen an arabian lady make her native ashta which is clotted cream. She made hers on the stove top and it typically takes around 2-3 hours but you have to be close by to keep check on it throughout. I'm afraid that clotted cream takes gentle heat and lots of time to make - I've not yet seen a hack that will give you an authentic product at the end. Oh and I have seen a comment from someone who made hers in her crockpot on a warm (not low) setting but I forget how long it took.
