Lao Gan Ma vs. Fly By Jing vs. Xi'an Famous Foods | 3 Chili Oil Crisps Taste & Review

My husband and I tasted 3 different brands of chili oil crisps, and tried to figure out which one is our favorite. Here are some short introductions of the 3 brands in case you are not familiar with them.
Lao Gan Ma:
You can’t talk about chili crisp oil without Lao Gan Ma. Lao Gan Ma, literally translates as old godmother sauce. This Guizhou chili crisp is created by a legendary women named Tao Huabi (陶华碧)。
Originally, her chili crisps were offered to her noodle shop customers for free, then it turned out the chili crisps became more famous than the noodles she was selling. Tao Huabi started her chili oil business when she was 50, 15 years later, Lao Gan Ma became the most well known chili oil brand in China, and credited with popularizing Chinese chili oil condiments in the western world.
Personally, when I just came to the US, there were limited resources to buy authentic Sichuan dry peppercorn or chili peppers. I just used a lot of Lao Gan Ma to cook/stir fry spicy dishes. Lao Gan Ma definitely enlightened me on cooking!
You can buy Lao Gan Ma in most of the Asian Groceries. The bottle from the video, I spent $3.19 (7.4oz) from Weee.
Fly By Jing:
Sichuan Chili Crisp Sauce from Fly By Jing. I have wanted to try this sauce for a long time, since they use top quality, all natural ingredients, sourced, and crafted in Chengdu. The company strives to bring the authentic Sichuan chili crisp to the world! Sounds really legit, so I have really high expectations on this one!

Xi’an Famous Foods
Besides Guizhou and Sichuan, Xi’an is another region famous for its chili oil & chili crisps in China.
The famous noodle restaurant Xi’an Famous Food in New York launched its own retail chili oil & crisps. My husband and I had a great memory dine-in at the restaurant while we traveled in New York. I have to give this “the main driver of flavor in many dishes in XFF restaurants” a try when I saw this “ Year of tiger special edition XFF chili oil & crisps jar” online.

    Such a good video! Great commentary on each one, so you have all the info you need. But in the end, I felt convinced I needed all three and needed to take notes and label each bottle for what it pairs best with. 😂

    Wear a musk if you make your own chili powder. I made my own chili oil, and I pretty much pepper sprayed the whole apt.

    great video. I'd love to try fly by Jing and the X'ian one some time. I think we only get LGM in new zealand. I have seen SBs umami chilli oil in store recommended by Rie from tasty but it was about 13 dollars for a small jar vs 6 for LGM. I didn't buy for that reason. For the big cost difference between LGM and other products it makes it hard to look last it if you have limited money. I find it really amazing for making meals tastier. would like to explore making it myself though and would like to support smaller brands too. With economy of scale they are just so pricy in comparison

    Totally, I think that's why LGM is the highest selling chili oil. I used to use LGM to pan fried dishes daily, and I didn't feel bleeding money. You can't do that with the other two brands. Also, people might have concern about the preservative in LGM, from that perspective, I think home-made chili oil makes more sense, it's affordable and healthy. I'm big fun of tasty, and I heard a lot of good things about SBs as well, but I haven't gotten a chance to try it yet.

    I’m literally obsessed with chili crisp after trying the fly by jing and Lao gan ma. And when I say obsessed I’m not even exaggerating 😂 the first chili crisp I bought (came across it at my local Asian market) and ever tried was the fly by jing and I was HOOKED lol. So as soon as I heard about LGM being the OG chili crisp, I didn’t hesitate to get a jar of that too obviously lol. Sometimes I even put both of them on whatever I’m eating at the same time 😂 I’m running low on the fly by jing and I might cry once I run out 😂 no but seriously I want to try other brands of chili crisp and there’s so many I don’t know which to choose first 😂. My question about that other kind you guys tried is does it have a crunchy consistency or is it more blended with smaller pieces of the chilies? I really love the crunch that comes with LGM and the chewy pieces of the fermented black beans in fly by jing. that other one seems more like a sauce, then a crisp.

    The other one (XFF) is more blended with really small pieces. No fermented black beans or chili crisp. It's really good with "wide" noodle. I'm glad you like the other 2. The other 2 is more towards to the numbing spicy, the XFF one is more towards to the fragrance spicy. Hope that makes sense.

    Im the same. I can't eat rice and eggs without it. I start to use it as a paste for sour soup during rainy and cold days 😂😂😂 it's the BEST!

    for the price and taste, lao gan ma is the best. Because of how cheap it is, it could be a dish on its own.

    I just tried Laoganma today on shirataki noodles and wow, very tasty while adding a crunch especially the beans and not over powering. My mouth got a little numb after my meal though but I don't mind that.I agree it wasn't as spicy as I'd like but that flavor and smell is so good. I'll def be keeping it in stock. Great review!

    I tried the Fly By Jing and don't care much for it. The jar was 1/4 filled with oil. I will try another brand, but have since made my own. The first batch I burned, the second batch isn't hot enough. lol I'll keep working on it!

    @@happyappetite8079 maybe to make the trial more fair. Measure a gram of chili with NO oil for each and then take another 1 gram of oil fpr each. This is toooo make sure that your are not using more or less oil/chili in one or the other brands.

    No way I’m paying over $20 for a small bottle of a condiment that’s just marginally different from the much cheaper laoganma.. Rather buy a nice bottle of wine at that price lol. Good reviews in any case

    *Lao Gan Ma Chili Oil with Mushrooms (and rat hairs).* I ordered this online as it sounded interesting. I added to hot rice and stirred to try it. The mushrooms have a very firm but satisfying almost meat like texture. Then as I was cleaning my spoon to put the freshly unsealed and opened jar in the fridge, I found a rat hair sticking out into the air. I pulled it out, of course going right to the ingredients list again to make sure ther was not something in it that could look like a dark tapered rat hair with varying darkness from tip to root. Nope... Then I dug in the spoon and found a second hair the same size. I wondered if the nice meaty texture was rat hide. THEN I went online and Bob's your Uncle. Yes I am making noise whever I can and I'm going to call the US number on the jar tomorrow. If I learn anything interesting, or wake up sick tomorrow I will update this. There are many hotter condiments than this one but it qualifies as hot. Update - the US office did email me back about rat hairs. They asked for a photo but I have no camera capable of that. No further communication since then. Note - This was originally posted over one year ago in 2021. They thought they were done with me but you see otherwise.

    ​@@popeyegordon Yeah, totally understand. There are types of chili oil, they are great for enhancing the flavor of dishes instead of overpowering them, and they are not spicy at all. It all depends on the chili type. For example, Lanzhou Beef Ramen Noodles is well known for their chili oil, full of fragrance, not spicy. I haven't found that type of chili oil in any store-bought jars. If I find it in the future, I will definitely let you know. :)

    In terms of saltiness FBJ definitely towards to the plain side, it's spicy to me though. :) I hope they can load more of the fermented black bean in it.

    I waited for months for the sauce to be available. Then I tried it on salmon, on eggs, on everything. I couldn't even tell it was there, even using a full tablespoon. I got suckered by the story, too. In the end, it's 3-4x the price of Lao Gan Ma, with 5-10% of the flavor.
