Spicy Chili Oil Perfectly Coats Xi'an Famous Foods' Most Popular Dish | Legendary Eats
If you walk into a Xi'an Famous Foods, you'll likely hear the rhythm of wide hand-pulled noodles slapping onto the counter. The restaurant's biang biang noodles are the star of its most popular dish, spicy cumin lamb noodles, one of the dishes born out of a father-son dream to share the cuisine of their hometown. The city of Xi'an sits at the eastern end of the Silk Road, where flavors and cuisines of China and the Middle East combine, and today, the cuisine attracts hungry New Yorkers to Xi'an Famous Foods' 10 locations.

I visited years ago and the noodles are certainly delicious but I’ll never forget that Jason Wang donated ~$75,000 to the suicide prevention hotline the week Anthony Bourdain died. This family will never forget how Bourdain’s visit jumpstarted their massive success.

Why do you think, as a broke loser nobody, that you're in a position to validate whether someone has skills, despite having none yourself?
Oh thank God this restaurant hasn't closed yet. I saw some interviews of them at the beginning of lockdown and economic meltdown, they sounded pretty grim back then (they didn't get the early phase of COVID relief). Thankfully they are surviving now and hopefully forever more.

For the East coast folks, you can order the whole package from them online. They send you the chili oil, cooked lamb, vegetable, and the dough. You can pull the noodle like in the video before cooking it, then mix everything together. It's pretty fun and tasty just like at the restaurant.

There is a lot of craft that goes into this. Making each set of noodles to order for a restaurant takes time and space. You can’t pre-make things in advance. You’ve got to appreciate the dedication to the art.

Lies again? American Education Evil Angel
Indeed. On KZread, I saw recently some happy people in rural Xi'an foraging casually for special meals wild arugula, wild thyme, etc., and even wild morel mushroom, which would be outrageously expensive in the west, and the ways they prepared and combined these organic food ingredients with, for example, lamb, vegetables, starch, etc. were just so "international" !!! I think Silk Road definitely contributed to the exciting multiculturalism of Xi'an.
I'm from Xi'an!!!! I miss this !
I simply heard “spicy cumin lamb noodles” and I legit started salivating. It’s like I’ve been waiting my whole life for this

Looks delicious, love Northern chinese food. From Malaysia.
I’m envious, I wish I eat that in my house and I’m Chinese. But sadly, my folks are not huge fan of spices. In fact, my mother is Cantonese/Southern Chinese. She has this philosophy that food should be ‘pure’ or natural; always lightly flavored and balanced. For example, rice should stay white and never mixed with any stuff, except fried rice.
