Kurdishbestfood - Paneer - “Zhazhi” / Homemade Cheese

Ingredients:
▫️5L of milk (sheep’s milk)
▫️1 cup of distilled white vinegar.
▫️40g bunched Chives
▫️Sea salt
Instructions:
🔸Wash the bunched chives with cold water. Chop the chives finely. Add 1 tablespoon sea salt and mix well. Add to a colander and leave for 10 minutes. With a tablespoon press against the chives so that you extract the liquid. (See video)
🔸Put 5L of milk (whole milk will yield the best cheese) in a medium or large pot and just bring to a boil-you want bubbles forming around the edges of the pot.
🔸Once the milk is just about to start to boil, with bubbles along the edges of the pot, at 80 degrees, add the acid nice and gently, that will make the milk curdle. My favourite option is a 1 cup distilled white vinegar for 5L milk.
🔸 Turn the heat down and let the acid curdle it. You want the curds (chunks of cheese) and whey (remaining liquid from the milk) to fully separate. Depending on the milk, the acid, and the temperature, this will take between 10 and 20 minutes.
🔸While the milk is dividing into curds and whey, line a colander or strainer with a double layer of cheesecloth or a clean kitchen towel and set it over a large bowl. After the milk has divided, pour the curds and whey into the waiting lined strainer.
🔹I poured cold water on the cheese at this point, as it is really hot and if you just put the cheese hot into the cheesecloth, some parts of the cheese will not be completely white instead it will have a yellow tone to it which I didn’t want.
🔸Add the chives to the cheese and mix well with your hands.
🔸Add 2 tablespoons sea salt and mix well with your hands as shown in the video.
🔸Make sure the curds sit above the strained off whey so any additional liquid can drain off fully.
🔸Add the cheese to the cheesecloth.
🔸Feel free to lift up the cheesecloth or towel and squeeze out more liquid if you want a firmer cheese. I wanted the cheese to be really firm, therefore I squeezed it for a good minute and then placed something heavy onto the cheese so that any more liquid that’s left is squeezed out. I placed this on a cooler place overnight.
🔸For the next day take the cheese out of the cheesecloth and place the cheese into the fridge for a few hours. I wrapped the cheese with cling film.
🔸Cut the cheese into small pieces and store in the fridge and it’s ready to eat.
