Keto/Low Carb Apple Cider Donut Recipe

It is apple picking season here in western New York and that means our local cider mills are in full swing producing apple cider for all the super markets, plus open to the public with fresh baked apple cider donuts. So people were asking for them at the bakery, so I wondered if it was possible to make them keto. I did some research on apple cider and regular baked apple cider donut recipes. Since my keto donuts are so low carb already that adding some apple cider to my donut recipes didn't make them very high in carbs still. And they turned out delicious!!

    Definitely the season for the cider (cake) doughnuts!! If we didn't want to add the carbs, what liquid should be increased and how much apple extract to use to sub for the 1/2 c of cider? BTW, I made Maria Emmerich's (egg white bread based) recent Boston Cream recipe and added extra sweetener (several drops of liquid stevia) and vanilla extract to the doughnut base. It took far longer than cited for the custard to set up. It was an efficient use of both the whites and the yolks of the egg. It was pretty good in flavor and the texture was close. Perhaps that is an avenue to explore?

    @@lorim.4136 you would need all milk then instead of cider and I've never used applie extract so not sure. Maybe start with a tablespoon.

    Using cinnamon apple tea works very well, I empty the contents of the teabag into my batter. I suppose you can make tea as well, and use the liquid.

    Those look scrumptious 😋 I had an abundance if green apples last week made 3 apple pies, not keto, and bunch of apple muffins for grandkids. So I thought what if I add just one small apple to my keto muffin recipe and a tiny bit of apple flavoring? They were so good, the carb count is very low and I really enjoyed using my apple harvest. 🍎

    In 2019, we moved from MI to TN. In MI, we had the best little farm near us that sold apple cider and apple cider donuts. I only had one in the entire 6 years we lived there because I was on keto. But the memory of that donut haunts me because it was so delicious. Yesterday we went to an apple festival here in TN. No fresh apple cider and no apple cider donuts. So disappointed. Otherwise, we love TN!! But I have all the ingredients to make these donuts and I can't wait to try your recipe! Thank you!!

    I love this channel and so far every recipe of Alycia's I have tried has been the most delicious keto baked good I have EVER TRIED! Yup. These donuts are the absolute best keto sweet treat I have ever tried! I did change it up just a little because I think I dislike the cooling effect of erythritol even more than Alycia. I swapped out some of the sweetener in the cinnamon-sugar coating with a mixture of Allulose, Trim Healthy Mama Gentle Sweet, and a teaspoon of maple sugar. Also, I made a mistake with the batter and instead of adding 4 oz of apple cider, I used 2 oz of apple cider vinegar and 2 oz of apple cider (I noticed this halfway through pouring the vinegar into the batter and stoped). Also, I used Kefir as the alternative milk. I always seem to lose interest in keto desserts I have made after it sits on the counter for a few days, but these actually improved every day. The cooling effect of the erythritol after 2 days on my kitchen counter has almost completely disappeared! I'm not sure what magic is happening there, but this will be my go to sweet treat anytime I'm craving a keto treat. Great job Alycia! 😋🍏🍎

    I made your Apple Cider donut recipe today, 😋. I changed a few things. Used apple cider vinegar(no carbs). And added yeast to my milk and let that develope, and proofed the dough in the silicon molds at 210 degrees in the oven for an hour. I like the yeasty taste. They turned out gr8 👍. Pregnancy looks good on you, little mama!

    I'm not sure if it's your weather, but after 30 min of proofing the donuts were round and fluffy. I waited another 15 and checked, they were flat and cooked, this is at the 210 degrees. I think checking often and then baking when fluffy might be better? Your thoughts? You didn't say how much yeast you used, so I used 1t to my flax milk when slightly warmed. I also subbed with the acv.

    I will use a mix of Glycine and stevia and use the egg white bread dough cause I don’t do nut flours and xanthan gum. I can’t get Allulose here in Germany, I have a monkfruit/erythritol mix but I haven’t used it yet due my issues (getting diarrhea) with sugar alcohols sweetener.

    @@stephsan7265 I created my own recipe cause I have to substitute some ingredients I can get here in Germany. I subscribed to the KZread channels of Indigo Nili, Maria Emmerich, Amy: Carnivore‘s Angel, JanetGreta, Ketogenic Woman and now Keto Upgrade. I‘m mostly Carnivore and this is why I need to find ways to substitute a lot cause I don’t use coconut or almond flour. If I need another flour I grind stale dried egg white bread into flour and use this. I use fresh egg whites. For one bread 9 egg whites beaten to stiff peaks with salt and cream of tartar. Bevor I beat the egg whites I start my pre-yeast dough with 1 scoop of inulin, a half scoop of Gelatine, a package of active dry yeast and some hot water (110 F which would be 60 C). When it does the bubbling I add 4 tiny spoons of arrow root powder, half a scoop of acacia fiber and 1 scoop of psyllium husk powder and let this proof. I add my dry ingredients which are mixed together (3-4 scoops of egg white powder, 1 teaspoon of tasteless electrolytes, 1 scoop beef collagen, 2 scoop of beef protein, 2 scoop of tasteless whey protein, 1/2 scoop nutritional yeast, 1/2 scoop of beef bone broth powder, 1/2-1 scoop of glycine (part of this glycine I mix into the pre-dough). When this is slowly incorporated I add the pre-dough and when this is slowly incorporated I add the butter powder and 4-5 egg yolks. Then I fill up my silicone bread pan or my bun pans, let it proof on top of my oven while the oven is pre-heating for 30-60 minutes and bake this by 350 F or 175 C for 45 minutes. Then I get it out of the oven, get it out of the pan and get the baked bread without the pan on the rack in my turned of oven. This will harden the crust and the color of the bread will also deepen to a golden brown. The bread holds the form and will not shrink. I can slice thin slices. I also don’t slice the whole bread but every day just the slices I need for lunch. I keep my bread on the counter in the silicone bread pan and it holds for 7-8 day without getting stale. It stays fluffy and moist cause I press the side I cut the slices from to the end of the pan. This way there is no mold and the bread keeps it’s moisture and fluffiness. I have several silicone bread pans but I use the one for a kilogram bread the most. I also have round silicone pans and my last experiment with the egg white bread dough was making pizza and pie crusts. With the pre-baked pie crust I made a traditional German oven baked cheesecake but tweaked to Carnivore means I left out the vanilla pudding powder but added 5 egg yolks and 1 whole egg and I used quark instead of cream cheese. The pizza was awesome. Sometimes I‘m Ketovore so I added a little tomato sauce (1 tiny tin of tomato paste mixed with water, salt, Italian herbs and a few spoons of fatty beef juice from my braised beef soup meat). I proofed both the pizza crusts and the pie crust.

    Baking is a science if you take something out you have to change or add something else. If you take out butter it will be more dry and crumbly.

    Alycia, I so appreciate your non-nut Keto recipes! Do you think it’s impossible to make a fried yeast donut like the Krispy Kreme or Dunkin glazed donuts? And how would you make a donut totally round without it having a flat side?

    Oh my...same about the avocado spray... doesn't work well at all as a non stick spray... I admit that for non stick I still use Pam... sitting on 2 big bottles of the avocado one feom costco...i use it to roast veggies and stuff but not for baking...

    You can, I diced a bunch cooked it until tender in allulose and cinnamon, then topped some muffins at the bakery. They turned out good.

    Hi! These look and sound wonderful! Where I live apple cider can mean two different things, so are you using unfiltered fresh pressed apple juice, or the sparkling apple cider ("hard cider") that you buy at the liquor store? When I was pregnant with my guy (who is now 19 and 1/2), I could not even stand the smell of coffee let alone drink it starting 4 weeks after conception, and craved tomato everything including catsup! Of course, for me that was pre-keto, so lots of catsup with my fries (very strange for me). I ended up switching to a cup of tea every morning +/or chocolate breakfast shake to get me going, and had to wait I think 6 weeks after the birth before I could tolerate coffee again. It's very interesting what pregnancy does to our bodies!

    Thanks! Apple cider here is just unfiltered pressed apples we call the other one just hard cider. Yeah I haven't had too many weird food things going on. I thought tomatoes tasted too sweet for awhile but got over that halfway through. Haven't been craving much else. But it is crazy the effect on our bodies, like the baby brain and dropping things all the time.

    @@KetoUpgrade I'm not sure where you're at in your pregnancy, but if you get ahold of a book called "fertility cycles and nutrition" by Marilyn Shannon, and follow the supplement recommendations for pregnancy, you will find a dramatic change in your energy levels and brain function. The premise behind these Doctor-approved recommendations is to optimize the nutrition of the mother and the baby without taking too much of anything that could be dangerous for baby (such as more than 10,000 IUs of vitamin A as an example). Most commercial maternity vitamins have almost no regard for the mother's nutritional needs and just give an appropriate dose of folic acid or folate to prevent neural tube defects in the baby. There are also tips for minimizing or avoiding morning sickness and edema; and if you're an older first time Mom, there's another recommendation which helps prevent or delay pre-eclampsia, while having other benefits regardless of your age. Anyway, I hope this is helpful.

    I use one or the other depending on the recipe. Cookies I usually use a paddle. Looser batters I usually use a whisk.

    Not sure what part you are talking about to spray the butter. On the pans or at the end when brushing? Either way I would think if you put melted butter in some kind of spray bottle it would harden in the sprayer before sprayed. Yes I have that written in the recipe.

    These did not turn out for me, but there were some lessons to share. Do NOT over fill them. I only had two pans and didn't understand the consequence of overfilling the pans. Think "muffin top". Haha. Plus, because they were overfilled, I had to cook them longer and the "pan side" of the donut was overdone and didn't taste great even after I cut off the muffin top (the muffin top part wasn't terrible, but not what I was hoping for). Also, I am not sure if my whey has turned, but this recipe also imparted an unpleasant smell when the donuts were cooking. :-( (I used Isopure and it is NOT expired.) I wonder if anyone has tried to sub the whey for egg white powder? I am seeing that tried here and there, but I am not sure how it will work. I also need to adjust my expectations. I have had AMAZING apple cider donuts from a place called Apple Hill in Northern California and that is what my mouth really wanted. I know that is not realistic. :-(

    Lol normally no it's not but it made a really thick coating of cinnamon and sugar on the donut, I would have run out by the third donut, lol.
