APPLE CIDER DONUTS RECIPE | The Best Cider Donut I've Ever Tasted

The apple cider donut almost always comes to mind when we're talking about the most nostalgic fall foods. In my quest to find the perfect homemade cider donut, I found that the best version of this was both yeasted and made with a little baking soda too for what, to me, is the perfect combination of light and yeasty and a little cakey. This is honestly one of the most insane, mouth-watering things you can make and I'm excited to show you how to do it at home.

FOR THIS RECIPE YOU WILL NEED
DONUT DOUGH:
60g or 3 TBSP BUTTER
250g or about 1 C. FRESH APPLE CIDER
375g AP FLOUR
15g SUGAR
5g SALT
3g CINNAMON
1g or 1/4 TSP PUMPKIN SPICE
5g YEAST
2g BAKIG SODA
SUGAR/SALT COATING:
25g or 2 TBPS GRANULATED SUGAR
50g or 1/4C. RAW SUGAR
5g or 1 TSP cinnamon (ROUGHLY 1 tsp)
1-2gor 1/4TSP SALT
1. Brown butter, deglaze with cold cider
2. In food processor on medium speed, combine all the dry ingredients
3. Stream in butter and cider mixture
4. Flip into oiled medium bowl, rise on counter 2 hours
5. Lightly flour work surface then the dough, Roll Dough into 8X12 rectangle, use ring molds to punch out 6 rounds, then the holes.
6. Lay cut donuts onto lightly floured parchment on sheet tray.
7. Press scrap dough back together into rectangle about 1/2" thick and punch 2 more donuts.
8. Proof on counter covered with another sheet tray for 1 hour
9. Fry at 350 for 90 seconds per side. Drain on Wire rack
10. While still hot toss with sugar/salt blend and cover generously.
Let cool 5 mins, then absolutely murder these donuts with enthusiasm.

    These look fantastic and I'm so happy to see the lack of shame over buying pre-mixed pumpkin spice. I will say though, for these or any other apple (or carrot!) desserts you might make in the future, I do urge you to try ground cardamom in your testing phase. I'm not a bit fan of allspice, but cinnamon, ginger, nutmeg, and cardamom are absolutely amazing!

    Every couple years or so I take a half gallon of unfiltered cider and leave it on the stove on low for most of the day, until it gets down to about 2 cups. It's spectacular, every drop tastes like fresh apples. It takes all day, it dirties a couple dishes and takes up space in my fridge forever but it is worth it for me. I guess it more of of an evaporated cider than a boiled cider but I tried boiled cider first and it was not what I was hoping for.

    Made these for my sons birthday last weekend they were a big hit. I did them in the air fryer instead of oil. It gave me some crispy donuts but I had to brush on a little melted butter to get the sugar and cinnamon to stick as the fryer dried out the exterior a little much. I’ll have to work on that issue. In the end they were dope. Love the videos Barbacoa beef tacos are a weekly thing here since my wife’s family owns a dairy farm beef is never in short supply in our house. Your channel is about to blow up!

    Such a good recipe!! Great flavor too! I had to make conversions in the measurements because I live in high altitude. I baked them instead of fried them for my wife and they were a hit! (She prefers baked food over fried food unlike me😂)

Appreciate the suggestion on not reducing down the cider and especially the salt in the coating, which I'm excited to try.     Thanks for watching. I do not, I’d coat in neutral oil and bake at 375 degrees for 12 or so minutes. That’s an estimate.

    i love appIe cider donuts and decided to give theses a try... never have fryed donuts before they came out looking fabulous... all ingredients were weighed...the texture was right with a nice crunch after frying.... taste was more on the salty side and would seemed to be more from the sugar coating...i plan on reducing the 5 grams salts down a few grams... i had also air fryed a couple of donuts...taste was similar but the donuts would need to be brushed with melted butter to get the coating to stick...they didn't look as good appearance wise as the fryed ones... i will see if i can dial that in next time using the air fryer... trying your cake dounts next...since i have oil needing to be used :>)

    Brian, you asked for feedback and so here goes: Apple cider cake doughnuts only taste their best in the Fall. At least to me. Apple fritters should be made from an all yeast dough with bits of crisp apple and dipped into a somewhat thick glaze that forms a milky white sugar coating or crust. My one time favs were sold at Target through their Market Pantry brand, but as with too much out there, the quality eventually drops off. I then lose my taste for them and want to cry. Oh, but the happiness I felt while eating those fritters in their heyday--in morning with a huge cup of coffee. Such lovely memories.....Sigh.

    Ben Christie there really isn’t a way I’ve found, they are mucho perishable. I would say freeze them once cooled off and then reheat In 325 oven. That’s worked for me pretty well. Microwave works for 10 seconds too but you lose any crispness. Godspeed bro. Pics or it didn’t happen, feel me?

    I love to drink apple cider and would probably have the ingredients to make cider donuts more often. However I do like going apple picking so making both would be a treat. Donut shops typically make fritters from the scrap dough after cutting their yeast risen donuts. Do you think if I double this recipe I can add the apples from your fritter recipe and make the double down cider apple fritter donut explosion. I’m a best of both worlds kind of guy.

    If making the dough with a bowl and spatula, I assume you end up having to knead like a regular dough .... Would it be 5-10 minutes and remain sticky? Or should there be little to no "stick" by the time you let it rest? .... Unfortunately my food processor is a little to small for the job this time.

    theheckwithit I did myself in the first few test batches. I didn’t find that it added much in terms of apple flavor, and the added sugar made the donuts take on more Color faster and almost burn before they were cooked. I don’t recommend.

    First donuts ever! My official taste-tester (aka "the wife") found them to be *ever-so-slightly* salty...not in an "eww, these are too salty to eat!" way, though...just noticeable. I did use unsalted butter (you didn't specify) and used coarse Kosher salt for both the dough and the sprinkling (I know that regular ol' iodized salt can make dishes way too salty since it's so fine). I used 100% unfiltered apply juice because I didn't want to buy a huge gallon of apple cider that I'd then have to drink later and I thought they were tasty and not too salty, but any suggestions for what to do different next time? Thanks! :)

    So "sour apple" flavor includes this stuff called Malic acid. I wonder if adding just a pinch of powdered malic acid would amp up the apple flavor without tasting fake?

    Hi Brian. I have a small push cart hot dog cart. I do not think I can make these donuts and be profitable. Gotta have a much bigger recipe and I fear these fried donuts might degrade too much by the time I transport them to the cart and put them on location.     Tough choice between the cider doughnut and an apple fritter. With a cider doughnut you might be able to have more than one whereas with the apple chunk filled fritter you stick to one serving. I can’t decide lol.

    @@BrianLagerstrom I hope I don't sound like I'm being a jerk, I just know that baking soda is a quick rise. When you mix vinegar and baking soda together they react, but after just a few minutes they neutralize each other and the bubbles stop forming.

    So 100% pressed apples... Does that mean pressed apple juice not from concentrate would work (that's widely available here in the UK). Muslim, so can't use cider but trying to find a way to give these a go. Haven't tried either yet, but the fritters just look like they're on another level

    Yes, my sister did that and had good results. I would let them proof for maybe 20 minutes before fridge

    Can you get a good result baking and if so what process needs to be changed? Don’t get me wrong, I love a classic fried cake donut but don’t like the oil waste and possible mess.

    Afternoon Bri - I know this is an older video, but I have a question - when you're saying "apple cider", you're not referring to something alcoholic, are you? Over here in the UK, "apple cider" is an alcoholic product, but with you saying "not from concentrate", that sounded more like an apple juice.

    In the us Apple cider and juice is used interchangeably. Kind of.... it’s complicated haha

    i havent used air fryers so i'm not sure what the result would be. im guessing it would react more like a baked donut than fried.

    could it be that there is something wrong in the metric conversion of the recipe, the dough came out very, very wet and sticky compared to the video, and given the weights: 275gr flour and 250gr apple cider seems like a high, high hydration dough?

    I’m Brian’s wife so I am likely biased, but this is the best cider don’t I’ve ever tasted. The yeast makes it lighter than straight up cake donuts and it’s overall a delight.

    I'm from Belgium and here apple cider is a fermented, most often sparkling, alcoholic beverage. I guess that's not what you're using?

    Correct, in the states we call cider the in fermented sweet pressed juice. But we also call it the alcoholic beverage. This recipe calls for fresh apple juice.
