KETO JELLY DANISH
Makes 10
Pastry Dough
3 eggs, yolks and whites separated
2 tablespoons unflavored zero carb protein powder
2 tablespoons almond flour
2 oz cream cheese, softened
1 tablespoon sugar free sweetener
1/2 teaspoon cream of tartar
Jelly Filling
1/2 cup boiling water
2 1/2 tablespoons powdered sugar free sweetener
1/2 teaspoon konjac gum powder
1/2 teaspoon lemon juice
1/4 teaspoon flavor extract
food coloring
Icing
3 tablespoons powdered sugar free sweetener
1/2 teaspoon lemon juice
1-2 tablespoons heavy whipping cream
1️⃣ Separate the egg whites from the yolks and place each in a small bowl.
2️⃣ To the bowl with the egg yolks, add protein powder, almond flour, softened cream cheese and sugar free sweetener. Mix with an electric mixer until smooth. Set aside.
3️⃣ To the bowl with egg whites, mix with a clean and dry electric mixer at a low medium speed until the mixture turns frothy. Add in the cream of tartar and turn the speed of the mixer up to high, continue mixing until stiff peaks form.
4️⃣ Carefully fold the yolk mixture into the egg meringue until combined. Don’t aggressively fold or mix, the goal is to keep the airiness of the batter in order to get the danish pastry to rise.
5️⃣ Scoop about 1/4 cup of the pastry batter onto a parchment lined baking tray spacing about 1 ½ inches apart. Using the back of a spoon make a well in the center of each danish batter to make room for the filling. Bake at 325 degrees for 12 minutes.
6️⃣ Mix the konjac gum powder with the powdered sugar free sweetener. Then pour mixture into boiling water. Immediately stir to combine to avoid clumping. Add lemon juice flavor extract and food coloring. Stir to combine. Mixture will continue to thicken as it cools.
7️⃣ Once your keto danish pastries have cooled. Add 1-2 tablespoons of the jelly to the center well.
8️⃣ In a small bowl, combine powdered sugar free sweetener, lemon juice and heavy whipping cream. Adjust the amount of whipping cream to create a thin icing capable of drizzling. Drizzle over danishes.

Love the recipe. I used actual strawberries that I puréed and add a bit more water to get the 1/2 boiling cup of the “water” that the Konjac powder was added to. Jelly turned out great and now I know how to make better jelly for my bagel also..😍

Oh, game changer, Annie! I used to make the cheese Danish with a very similar recipe using coconut flour and 1 more egg. It’s been awhile and I can’t wait to make your version of the dough. But the JELLY!! That opens a whole new world! And the best part is that I just realized konjac gum or konjac powder is just glucomannan powder and I have it! I need to order some more flavorings, though, since what I have are lemon and orange. Well, I have others like corn and cornbread, etc but somehow they don’t seem suitable for Danish pastries!! 😂 Thanks!

Konjac has a silent J. Propnounce like a Y. They make it from the konjak yam roots which grow in bogs. They make them into the konjac noodles or blocks found in Asian groceries. Miracle noodles is the US brand. I have watched somebody make homemade noodles in the frying pan on KZread. His kitchen wasn’t very hygienic though. It did make me think that it was a possibility to create ravioli in a fry pan using his sifting this powder and water into the pan. I think there are endless possibilities with it if it’s experimented with.

Un related question: do you have any suggestions for what to eat when you are dealing with a stomach virus? When my kids were little I used the BRAT acronym; bananas, rice, apple juice (or sauce) and toast. None of which are keto friendly. I have broken the rules and have eaten a couple graham crackers, some apple juice, tea and bone broth, oh, and some soft scrambled eggs. Any suggestions would be appreciated.

If you need gluten, could you just add some vital wheat gluten to the mix? That's almost all protein so it wouldn't add many carbs to the end product and it would add the gluten to help get a flake texture. To be fair, I haven't tried it. I did see one "rule of thumb" is to replace 1/3 of the recipe's flour with vital wheat gluten. Might be worth a shot.

I just made these!!! And did a few adjustments for my taste. I admit I struggle with no carb sweeteners!....so I went for LOW carb versus NO Carb! I just used regular sweetener to a ratio of 1:2 ...recipe called for 3 Tablespoons sweetener of low carb type, I used 2Tablespoons low carb sweetener and added the remainder 1 Tablespoon regular sweetener and I like the results! At least I find it more palatable for my taste. Now that doesn't mean I can eat the whole plate of Danish! But we should never do that anyway! 😋😂Thanks for the awesome recipe! PS.....These are light and airy and very satisfying! I may try and freeze some and see how they turn out! By the way the extra egg white, I just whipped it in with the three that became the pastry...still turned out great!

May I make a suggestion? What would really help us I believe, would be if you could please have the list of ingredients in grams as a option. Using grams and such as measurements makes it more accurate. Thank you.
