-You can prepare the curry roux in a day in advance. Or tightly cover and freeze it.
-If you have kids under 6 years old, or very sensitive tongue for spicy foods, I suggest to use 1/2 amount of Worcestershire sauce.
This curry isn't spicy, but they might feel a bit spicy. You can always add later!!!

-kombu (Dried kelp) 4g

-Chicken wing 400g
-Sake 1tbsp (15ml)
-Ginger 2-3g (skin-on)
(Curry roux)
-Onion 700g (as peeled)
-Garlic 30g (as peeled)
-Ginger 20g (as peeled)
-Carrot 1 (140-150g)
-Curry powder 8g
-Tomato ketchup 45g
-Worcestershire sauce 30g
-Butter 80g
-Plain flour 75g

And this chicken version is another masterpiece that well worth to try!!! It's a bit of work. So try this one for a special day, or dinner party with your friends!!     I like that the video had so much information, notes, and tips on how to make the dish and use as much of the ingredients as possible with very little waste. I'm Indian so I obviously have my own chicken curry recipe. But I'll definitely give this recipe a try. I'll just have to make my own curry powder though because I have no idea what Japanese curry powder has :D.

    While I don't have the specific curry powder that the chef uses in the video, I mixed a Balti Curry powder and Garam Masala together and it turned out really well. Why those? It was the only things I had in my kitchen!

    What a journey! I just finished a batch for my wife, who is excited to try it. I'm going to let it rest in the fridge over night. Thank you so much for the excellent guidance, chef :) Now I need a break - it took me almost three hours from start to finish. I Couldn't find kombu where I live - so i exchanged it with five dried shitaki and a small packet of dashino-moto. It worked out quite well. Greetings from Denmark - and thank you once again :)

    Amazing recipe. Careful tho, I've put a little too much water in the end, so I didn't get that creamy texture. Tip for those who haven't tried yet, add 1L of water first before adding the rest, and see if the curry's texture is on point. Thanks again for the recipe Chef!

    Thank you so much for teaching us from scratch. I absolutely love your curry recipe. I've tried making both chicken and beef curry following your recipes. It's just so delicious. I'm glad that you taught how to make homemade curry roux because I don't want to use those store-bought curry roux cubes. They're full of MSG, preservative and other chemical things.

    Hi Marline!! Great to know that!!! If you have little kids under 6 years old, I may suggest to use 1/2 amount of the Worcestershire sauce. Just in case if they feel too spicy. This curry isn't spicy. But if they got really sensitive tongue with it, may feel so. You can always add later!!

    Thank you for the time and effort put into this video! I tried this recipe and it was delicious, definitely a step up from using the S&B pre-made roux! This version reminds me of a better CoCo Curry Ichiban. Out of curiosity, do you know how this recipe should be modified if i wanted something more like Go Go Curry, which I think is a Kanazawa style curry? I tried a few recipes i found on cookpad, but my japanese is bad and none of the recipes seemed right. I can't figure out the flavor or how to get that very dark brown color.

    you can make it easily just with 'bumbu gule' from brand indofood from indonesia. it is the same as japanese curry than actual 'gule/gulai itself. bcos gule tastes more deep in spices and meat stock. more rich and flavorful

    I made this yesterday. And I have to say, I'm impressed. I always used premade curry roux before, but wow... I never thought I can make Japanese curry from scratch. Delicious! Btw, can we make the roux in advance and keep it in the fridge/freezer? If yes, how long can we keep it for?

    Hi maudesuzelle!! That's great!! I'm glad that you had an another good experience from my recipe!! 👍 Keeping curry roux. Fridge: possible. 2-3 days. Freezer: Possible but keep it in a ziplock bag, and make sure tight close. Should be alright for a month then!!!

    Lot of people say doing things like this take too much work but that's a pot not a serve, you can do all this in less than 15 minutes if you batch cook everything before hand, the roux can be turned into a paste and stored, the stock is something you can make and use anytime. Easily get a dozen meals out of something that size.

I noticed that you pretty much used kombu in every dish you made. It makes me wonder will it boost the flavor even more if you soak the kombu in either chicken stock, beef stock or even heavy cream for whichever meat your are cooking? I'm not sure if the flavor in the stock will cover the umami of the kombu too much... Or it will not extract the umami from kombu as efficient as water. BTW, all the music you chose for your videos were really good!

    Hi Xing!! Interesting question again! Yes using kombu for making other type of stock is often used in Japan (typically in Ramen restaurants) to boost the umami. And it all works!! (Just like what I did with my chicken Ramen video!!) Kombu doesn't have characteristics flavour, so it is a pure umami bomb. I actually experimented to soak kombu in milk this morning. And it became tastier!!! So that mean we can make great Bechamel sauce or any type of milky soup with this technique!!! BTW, The reason I'm using kombu in every video is that because it just work as good as using fresh stock which takes 5-6 hours or something. If you try one of my dish, you'll see why!! 👍

    @@CHEFSLABO Awesome! That's great to hear! I guess the timing the perfect since you tried kombu with milk this morning! I'm a big fan of Japanese cuisine and travel to Japan a lot! I never tried to use kombu before, that's why I'm so excited to see how you actually use it in so many recipes. I think cook is both science and art. I definitely will give kombu a try once I'm be able to find some in my area. Thank you for the information and I have been learning a lot from you! 😁

    Hi Andrew!! My recommendation is to boil potatoes separately with salted water. And add to the curry at the end. If you cook with the curry, it will end up massy. But it could be fine either way depending on your preference 😉

    I really love curry because of taste of curry powder and taste of mix of vegetables. Welp, once you tried, then it's gonna be hard to refuse to eat it again. If you like vegetables with meat and love spices (even hot spices), you should definitely try it, together it will be good in this dish. (I hope I don't made many mistakes when I writed lol)

    Hi Marsmella!!! It's because apple was for balancing the richness and the fat content of the beef. But chicken isn't as fatty as beef. That's why I didn't add it. But you can add it if you want 😊

    Chef, do you cook rice in kombu water or not. Heard somewhere that it's better to cook, or leave it overnight in kombu water.

    Hi MSOTDTMPCAES!! It's better to cook rice with kombu water👍 So wash rice normally, then pour water and kombu. Leave it 1 hour to overnight, then cook normally (Keep the kombu in there)😉

    Hi MrKhairule!! You don't have to buy expensive Sake. Use Ryorishu (cooking Sake) And use more sugar to substitute Mirin. If you wanna know more about Ryorishu, Check on the community tab in the channel. I had a post and picture about it!
