I just ate here yesterday. He served our food to us and I told him that I saw him on KZread. He gave the most genuine shy smile. Such a gentle soul. Very hardworking and humble gentleman. I wish him a long, healthy life.

これを毎日やっているなんて、たまらなく応援したくなってしまう… こういう個人店のお店程コロナ禍で生き残るサポートは必要ですよね チェーン店より美味しいし添加物も無いし！

仕込みの職人さん、手際がすごい。 現代の名工に認定したい。 今まで人目に触れることがなかったであろうその実直な仕事が、この動画によって、みんなの目に届いて、本当に良かった。

作業場から作業の音と機械音だけしかしないカッコよさよ

詳しい事は分からないが、経営者より現場職人を選び、なのにこの物凄い働き方は人として尊敬する！

私も飲食店で働いてるけどこういうのがどんどん次の代に伝わっていってほしい❗️ 親方の愛がたっぷり入ったカレーうどん食べたい❗️

うどん屋でバイトしてたことあるけど、 1人で全部やるのは凄すぎると思う。

完璧な仕込み合っての完璧な提供✨仕込みの方の無駄のない動きに脱帽と感動。食べてみたい。

一番感心したのは厨房がとてもきれいな事。仕込みだけではなく厨房の掃除や機材・道具の手入れにもきっと抜かりなく手が行き届いているはずです。こんなご時世ですがどうか末永く続けてほしいです。

凄く丁寧に作られていて厨房も奇麗。 日本が誇れる職人って感じです。

仕込みから営業まで一切無駄がなくて惚れ惚れします

うどん職人、天ぷら職人、うどん屋のカレー職人、トンカツ職人、 もう、何でも出来るようにならなきゃ、ダメなんですね。 尊敬です。

as a former chef, this is such a joy to watch. the way he does his prep is just so optimal and basic, and reminds me of how i was trained to do prep. that is, how to do prep alone, regardless of the amount of prep that there was. no movement is wasted, he isn't running anywhere, every action is optimised. truly beautiful.

As a cook of 14 years, this guy is amazing. He’s not only single-handedly doing the prep, but he is doing much more. He is simultaneously prepping for service and producing for the next couple days.

日本の文化ではなくて、不思議の目線で見る海外の人が多い！ なんで、日本は若者が頑張らなのに、老人達必死にやっているか？海外では年寄は日本ほど働きません！ お年寄りをそこまで仕事をさせると全体社会の問題があり、不親子である証拠！

几帳面で丁寧な海老天揚げに感動。花の咲かし方が上手すぎる。

お父さん1人で仕込みをすべてしてるのが 凄いよ。

36年生きてきて初めて飲食で働きましたけど、めちゃくちゃ体力使うし飲食業は体育会系だと知りました この力仕事をご年配で1人で準備すごい。しかも丁寧で清潔。 近いから食べに行きます

厨房めっちゃ綺麗。まじですごい

これだけ丁寧に仕事されてる方が作る料理、美味しいに決まってる。 近くに住まれてる方が羨ましいです。

朝から１人で… 凄い凄い👀❕❕ 内のきんじょには、こんな感じの昔ながらのうどん屋さんが無いんです⤵️⤵️ ラーメン屋さんだって‥昔ながらの中華が、やっぱ美味しいですよ😃 おじさん、何時迄も美味しいうどん作り応援してます😃 体気を付けて下さいね👋👋

別種目のお店やってます来月還暦のオヤジです 多分先輩にあたる年齢の方かと 朝早くから黙々と仕込み作業 営業中も 編集あるでしょうが 無駄な動きなく あー俺ももっと頑張らんなんなぁー って素直に思った ずーっと見てられる 近所にこのお店有ったら 間違いなく入り浸りやと思います 本人は当たり前の作業なんでしょうが 尊敬します お元気ずーっと頑張って頂きたい そしていつか行ってみたいです ありがとう！

カツ丼めちゃくちゃオーダー入ってたなあ。美味しそう🤤 おっちゃんやるなあ！ おっちゃんじゃないとこなせない。職人！誰か後継者を早く見つけて、このままこのお店続いて欲しい。

I love udon noodles, I made them tonight for dinner with pork spring onions and egg yolk.. I would gladly eat anything made by this man. You can tell he takes great pride in his cooking skills and it looks amazing.

This goes to show how efficient Japanese are, one single old man working a whole kitchen all by himself

Unbelievable dedication, I truly appreciate the commitment that this and other Japanese restaurants go to each and every day to give to the good people of this wonderful nation.

The gentleman that does the early morning prep is a treasure! So hardworking and methodical in what he does. I hope he's compensated well!

This is not a simple "one man show", he's a genius, he does the work of a dozen people, he is a master in maximising efficiency in every single movement, action, procedure. He's not wasting any time or energy in every single phase of what he's doing. This video is a lesson of life and work ethics...

Do you have any thoughts on why he chooses to work alone? I think it's either, he's a control freak, can't afford to pay workers, or he doesn't have good people skills. I know I have to mind my own business but his business is interesting LOL.

My respect to the owner who cooks and prepares udon noodles with care and determination. Next time I visit Japan, I will stay in Osaka for many nights. I heard that the food and street food in Osaka is exceedingly amazing. I shall visit his Udon shop.

Older people thrive off working ..my grandmother was 91 when she died .the day b4 she died she had a job working doing dry cleaning for a company my aunt owns. She worked a 12 hr day and died in her sleep. The doctor had given her 3 months to live and she died a few days over what was said .. she always said they can take my license but not my drive ...if u stop me from working just bury me now ... my children's generation don't wanna do anything but be on the phone or computer hardly ever outside...God bless our older generation of all nationalities!

@@davidgray7907 And may your grandmother's memory be a blessing! There's this older gentleman that lives in the village where our family goes for summer vacations. He's 87 (doesn't look a day over 70), and he's *always* busy. He mows our land plots with an old-school scythe whenever the grass grows too tall in our absence. He tends to several orchards in addition to his own. He forages in the forest. He works the land. He also has a few chickens and a pair of goats, I think. He insists that he has to keep busy, or else he'll just burn from the inside. He just isn't at ease when he's idle for too long. God be my witness, I am a citybirb and I hope to be like half as spry as he is now when I'm 70. I mean, I love running, swimming and such, but there just is this integrity to the man that I lack in comparison. Integrity and dignity. I'm sure you know what I mean.

こういう職人技系って結構目分量で量る事が多いイメージだけど、しっかり容器で計量してるのめっちゃいいな。

i really love how the japanese chefs do their prepping, very relaxed even tho they're doing a lot of task at the same time. its not so hectic like other restaurants.

動き一つ一つがその道を極めた人の動き・・・職人だわぁ～リスペクトしかない

結構年配の方なのに、すごい作業量・・！ すごいなぁ

His shrimp tempura looked amazing. His tonkatsu prep looked totally awesome. He started and finished a full shoyu stock while making another batch of curry sauce. As a Japanese American, these foods are part of my history and watching this owner/operator completely doing the work was magical.

:'D I've started to study Japanese recently (as they say, understanding a language to better understand its' people) and I'm so happy that I can read what's written on the paper lanterns outside. Fresh noodles are something else entirely (Italian descent here), and I'm very glad there are so many different types to try out there. I'm almost jealous of how much easier the machines turn the fresh dough into lots and lots of udon... Wish I could make fresh noodles at home like this so quickly haha! Looks super yummy!
