[No Music] How to Make Japanese Curry from Scratch

Ingredients:
300g onion
20g garlic
20g ginger
30g oil
1 tsp cumin powder
1 tsp coriander powder
1/2 tsp turmeric powder
1/4 tsp five spice powder
1/4 tsp chili powder
4 tbsp rice flour
20g white sesame paste
20g dried tomato in oil
1 tbsp brown sugar
2 tsp salt
500ml water
100g lotus root
100g spinach
100g mushroom
30g coconut oil
Instructions:
1. fry onion on medium to high heat until brown. it takes 10 - 15 minutes. then add powder spice.
2. in a blender, put sesame paste, dried tomato, brown sugar, salt and water together and blend well.
3. fry lotus root, mushroom and spinach in a pan.
4. add the onion paste and the mixture then simmer until it gets thicker.
5. Enjoy!

「作り方」
1、たまねぎを茶色くなるまで中火か強火で炒める。10~15分くらいかかります。必要に応じて水を加えながら、スパイスを加えます。
2、ブレンダーで白練ごま、ドライトマト、黒糖、塩、米粉、水を加えてよく攪拌します。
3、れんこん、キノコ、ほうれん草を炒めます。
4、1と2を加えて、とろみが出るまで少し火にかけます。
5、エンジョーイ!

    Thanks for the lovely video! A trick we use in Indian cooking is to fry the garlic, ginger, and spice in a little oil on low heat before adding in the onion. And then cook the onion for less time. This allows you to add your other vegetables in directly by to the mixture without reserving anything, and it helps your spices develop better fragrance and spread better throughout the dish.

    Indian curry is authentic and better. Japanese curry is a novelty, has a unique flavor, I just realized why the curry is thick like a sauce, it is because they add flour. Indian curry gets it thickness from tomatoes and onion.

    I think curry does not use sugar at all in cooking it so it can get a savory taste from coconut milk or use liquid milk.

    Browning the onions first really adds a lot more flavor. Cook the spice mix separately in a little oil before adding to the onions. I got that tip from a chef at an Indian Restaurant.

    Wow, very different from the Japanese curry recipes Ive seen so far. I was actually reading about curries in general today and was surprised to find out Japanese curry has been around for a lot longer than I expected, dating back to the days when the first curry spice mixes were being sold by Indian merchants to European traders, which were then introduced to Japan.

    Do you know a "curry" extualy means dish with sauce, the closest thing in English is a "stew". The stew can be any kind. In Bulgaria these type of dishes are called "яхния"- "jhahnia" The spices and ingredients can be various, depending on a family taste, region, markets, households...

    @@ixoraroxi curry is an english word. a "curry" need not be a stew. it can be a soup or a sauce or even a little bit of spiced oil and water.

    Being an indian. I was suprised to see everything similar to indian cuisine. The only difference was the sugar, dried tomatoes and riceflour blend. Replace that with fresh tomatoes and you have a completely indian curry.

    Coconut milk is better than rice flour mix for vegan. If it's regular curry I would put yogurt or condensed milk instead.

    I've been searching for a bit of time now on how to make japanese curry from scratch and back then it was hard to made it because I need to have Curry Roux. But now thanks to you I could make it from scratch and above it all, the recipe you're making are neutral (without any kind of meat) so everyone, apart from what religion they're in, can make japanese curry.     This recipe looks delicious, but I don't know if it will taste close to the curry cubes if that is what you are expecting. Honestly if you don't want to use the curry cubes just prepare your curry as normal, but add a curry powder like S&B Oriental Curry Powder instead. Then thicken the curry with a cornflour slurry.

    Hi, Ryoya, thank you for sharing! I learned this kind of curry from a friend, born in Taiwan, who has lived in Japan for 2 years. She always uses curry cubes. I find them easily in every Asian market. But avoiding ingredients with numbers as much as I can, I prefer to try this. I made a vegetarian cooking book with recipes around the world. It was so interesting to do research and find out, that every country has its own kind of curry, even here in Germany, where it’s called 'Eintopf' which means 'one pot', it shouldn’t be a soup, neither a sauce, but in between. It can consist the curry spice, which is usually in every supermarket, with a lot of the ingredients you used like coriander, turmeric… but the spices are different in every country. I try to combine the countries in peace☮and after my taste: cumin, Garam masala, herbs de Provence (France) or Italian herbs, fresh coriander leaves, soy sauce, fresh ginger, fresh turmeric, and a pinch of Xylit or sugar. The binding I do with Kuzu (Japan😉), arrowroot, corn or potato starch. Vegetables after taste and ingredients in the fridge… today: self grown pumpkin, taro, carrots and kale, and onions. I’ll try your tahin mixture, thinking it’ll give an amazing taste. I love real music, so I enjoy your no-silly-music videos a lot. Love, Monika❣

    Lotus roots have extremely Mild to no taste. It is more about texture. It has very similar texture of crunch salad potato. little more waxy, chewy but maintains crunchiness even after its been cooked in high heat. It's a great blank canvas. it is one of my personal favorite vegetable 😋

    This looks very delicious, although this is a complete different recipe. If you look for something that tastes like golden curry you will need some other spices (like fenugreek is one of the most important ones. :) )
