Jamaican Curry Chicken With Homemade Roti | Quarantine Cooking

Andre Fowles, chef and CEO of Everything Food Hospitality, is at home making chicken curry with roti, a quintessential Jamaican meal. Andre’s curry is made with chicken thighs and is packed with strong flavors like the scotch bonnet pepper, crushed allspice, and ginger. Andre creates a stew with the chicken, herbs, and potatoes, while showing how to make a quick and easy roti bread.

Don’t saying this is Indian or Pakistani yes it has South Asian influence but I’ve had Jamaican 🇯🇲 and Trinidad 🇹🇹 curries and roti and I prefer them 1000% times over Indian or Pakistani ones they have south Asian influence in there cooking but they cook it with there ingredients they don’t use multiple masalas and multiple chilli powders as well as Kashmiri whole spice (basaar) they use one or two south Asian powders one of them is curry powder for sure

Soooo, I followed this from beginning to end but for some reason my roti came out more like Naan. It didn't have any air it I guess? The link in the description unfortunately doesn't include the roti instructions and he went over it so fast. It wasn't super clear on everything. Blargh.

To all those persons commenting that this is Indian not Jamaican, there is no disputing the fact that it has Indian influence, however, the taste is completely different. When I make an Indian chicken curry I use cardamom, cumin, coriander, bay leaves etc. The chef's use of scotch bonnet pepper, scallion, thyme, pimento is unique to the Jamaican style of cooking. I'm pretty sure if some of you went to an Indian restaurant and ordered a curry and got what the chef made you'd complain that it wasn't Indian food.

The British conquered half the world...put Indians and Africans on the same islands where they created food like this...and still choose to eat unseasoned peas

To anyone who's not Jamaican: the sugar he's using is not the brown sugar you buy at the supermarket (i.e., it does not have a high molasses content; you can tell by how it falls into the bowl and it has a granulated look).
