Thank you Chef Barr for a wonderful (and timely) recipe with fall/winter in the air. This reads to me as a first cousin of jerk chicken so I am down with everything. I love your method of piercing the Scotch bonnet even though I would happily dice it up. Truly an outstanding recipe that everywhere on this planet can tweak to make it their own without losing the spirit and history of this dish. Appreciate you and #Munchies for taking the time to share this with all of us.

Ha! I was going to respond to comments. I’ll agree that this is not a classic Jamaican curry, but I’d fault the editors at Vice, NOT the chef represented here. I’d say most Jamaicans, including those in Jamaican restaurants are NOT toasting and grinding their own spices. But keep up the troll comments so the YT algorithm shows the video to more people, and hopefully helps Suzanne sell more books. I just bought one! If Munchies does decide to update the title, they’ll probably want to correct the misspelling in Suzanne’s name (two N’s)

As an Indian I am not eating any type of curry if the onion is not caramelised first. Marinating the chicken with raw onions doesn't serve any purpose. Also fry the potatoes or add them directly in small cubes rather than boiling them. Add you spice powder in oil on low flame for much deeper colour. Add water if your pot is too hot. Braise your meat in high heat and cover it.The water released serves as stock and you will never have to add water. Add water if the the food is sticking at tbe bottom. Also if the pieces are large or if you are in a hurry add hot boiling water. The cooking time will reduce drastically and the meat will be cooked to the bone. Chutney or any other sauce should be served as a side or else all your hardwork is ruined by mixing it with the curry.

Chicken is a god and the best truth. Trust chicken, worship, respect, don't doubt, delicious doesn't change. Chicken makes the world enjoyable and takes responsibility for the enjoyment of people's taste. There is a c between b and d. There is chicken between birth and death and we stand at the crossroads of many choices as we live in the world. It can be fried or seasoned or boneless chicken. That's why chicken is important, truthful, sour, and true.

We have Indian heritage in Jamaica. That's where the term "ganja" derived. During the late 1700 to early 1800, the British brought over 40k Indians to the island to work as indentured sevants on the plantations. They brought their culture which includes curry goat, curry chicken, east Indian mangoes, etc. Hence, curry chicken is indeed a staple of Jamaica.

I just knew Jamaicans were going to come under here and be angry😑😑. Curry is not authentic to Jamaica but it is infact authentic to India and countries with an Indian lineage ie Trinidad and Guyana etc. Real Curry is more than just pepper ah burn out yuh mouth.

You're SO ignorant and have no knowledge of Jamaican culture if you don't think curry was introduced to us the EXACT same way it was introduced to Guyana and Trinidad & Tobago. You see the title says JAMAICAN right? Our whole culture is not Indian, but it's a significant enough part of it and JAMAICAN INDIANS have developed our OWN way to make it. You mad? Just stick to your spiceless curry from wherever you come from.

Regarding your comment in the video - and I speak for many, I'm a huge Trump fan, white with blue eyes - and hate more than anything identity politics and divisive Democratic politicians like Waters and many others. I came across your video, love you, love your video, and will go to your restaurant if you were close enough. I also saved this video as someone who loves to cook traditional cuisines. So let's stop with the nonsense, the people that push for "diversity" try to gain political points - diversity is here for hundreds of years and thank God for that.

I agree with you to a certain point. We should have politicians who fight for the working class, whomever they are. We do have to understand though that POC do go through different, often violent, experiences than white people do.
