A Spicy Simple Caribbean Stew At Home | Quarantine Cooking

Kwame Onwuachi of Kith/Kin in Washington D.C. is at home cooking a beloved dish from his childhood: brown stew chicken. This relatively quick and simple stew comes from the Caribbean and includes ingredients like scotch bonnet peppers, onions, tomatoes, garlic, ginger, and browning seasoning, which lends the dish its rich flavor and color.

    Repping from Jamaica 🇯🇲🇯🇲🇯🇲 .....usually we would cut the chicken into smaller pieces so it absorbs the flavour better. If you want to make this and don't have chicken stock, feel free to use water. Love love Love how authentic this is ♥️🇯🇲

    The fact that he scored all the chicken is the same as cutting it up plus it's not like he's making curry chicken and there actually 2 ways for doing it so whether he didnt cut it up are not it's still just as good I personally dont like when stew chicken is cut up but to each is own

    Cut up chicken leaves you with bone fragments all over the stew, that feel like you cracked a tooth everytime you bite down lol I still love my Jamaicans though ❤

I left you some advice on ur chan. look them up. trust me ... worth the time. try stuff along the way make ur chan a self learning chanel as ppl learn along with you trying recp's in the books. good luck!

    You don't need all those sauces. What some do is carmelized sugar. Add some sugar to hot oil and watch it come to a syrup/paste, then you add in your chicken with some water and stir. For more flavour add onions, garlic, pepper, salt, black pepper, and any seasonings you have

    We make the same thing in Guyana, the only exception is we usually cut the meat into smaller chunks so it browns more evenly, and we have big families so cutting the meat into smaller a bits ensures everyone get a bite lol.

    I’ve made this dish but I got the recipe from a Jamaican friend. I omitted the scotch bonnet but it was still amazing. The only dishes I’ve ever eaten that was more flavorful was Rendang and Beef Biryani. With the addition of Brown Stew Chick, the three are my favorite dishes. Thanks for sharing your kitchen and recipe.

    In Trinidad we heat our sugar in the pot and after it starts to bubble we then throw the chicken on top which gives the brown colour to the meat.
