Instant Pot Corned Beef and Cabbage: A St. Patrick's Day MUST MAKE

An Irish Classic is made a whole lot faster in the Instant Pot! This St. Patrick's Day staple is made with corned beef, cabbage, potatoes, and cabbage, and Guinness Beer for a delicious classic recipe.

Recipe:
3 pound corned beef brisket
1 Seasoning Packet or 2 tablespoons pickling spices
1 large onion sliced
5 cloves garlic crushed
1 cup stout beer such as Guinness
1 tablespoon brown sugar
1 cup beef broth
1 pound small red potatoes cut in half
1 pound baby carrots
1/2 head green cabbage cut into 2-inch wedges
Salt and Pepper to taste
INSTRUCTIONS
Rinse brisket with cold water and thoroughly pat dry.
Place onion slices into a 6 or 8 quart Instant Pot. Place brisket on top of the onion mixture. Sprinkle with brown sugar, garlic, and pickling spices. Pour in beer and beef broth.
Select manual/pressure cook setting on high pressure. Set cook time for 85 minutes.
Once cook time has elapsed, let pressure release naturally for 15 minutes. Then do a quick release of any remaining pressure.
Remove brisket from the Instant Pot and place on serving platter. Cover with foil to keep warm.
Remove onions from pressure cooker using a slotted spoon. Drain off all but 2 cups cooking liquid in the Instant Pot.
Stir in potatoes and carrots and top with cabbage. Season with salt and pepper, to taste.
Cook on high pressure for 5 minutes. Once cook time has elapsed, let pressure release naturally for 5 minutes then do a quick release of any remaining pressure.
Thinly slice corned beef against the grain and serve with potatoes, carrots and cabbage.

    I too watched many videos on this and chose this. It all came out to perfection!! I cooked my cabbage separately as it was a purple one and I didn't want the other veggies discolored. I highly recommend this recipe!

    I tried your recipe tonight for St. Patrick’s Day and it was such a hit! First time on the instant pot, so much tastier than a crockpot. I rubbed all sides of the corned beef with brown sugar.     I been watching you for along time and you get better and relax more and more Im irish and you cook is exactly the way i been doing for 5 years in the instant pot i used to do the oven ,, on the stove top and in slow cooker. But last t5 years i did in the instant pot and i will not do any other way.I have a tip for you if you have a Costco near you i Found that Kirland has a great Turkey Boneless Breast in fridge section its about 3 lb and i did in the pot 30min and sliced for at least 3 meals with family 4 mashed potatoes and vegs keep up good work

    Great, I have a corned beef and was planning to make it this weekend. So far, however, I can’t find a cabbage. My husband’s family always puts a rutabaga in along with the veggies. I hope it will cook well in the Instant Pot. I’m so happy to have found you channel!

    Everything turned out perfectly!!! We had our first snowstorm going on, and it made a hearty & delicious dinner. The rutabaga was just right, too.     Excellent recipe and phenomenal flavor! My 5th time now.. if it ain't broke.. you know. Because I eat a lot of meat, and follow keto, the only substitution for me is using Brown and Swerve for reg brown sugar. For some reason last time meat wasn't as tender. I think i was doing 90 min before but did suggested 85 last time. Wouldnt think extra 5 min would make much difference. Of course always do the 15 20 slow release. Doing another as I post this.. hoping its fall apart tender. Keep y'all posted..Happy Easter!

    I had planned on making your Barbacoa Beef, today. I already made the sauce, which I will freeze now. But, after I opened the beef, it was a brisket, not a chuck roast, so I switched gears, and l’m making this delicious recipe, on Labor Day. I know it’s great, because I’ve made it several times.     This recipe for 3 pounds. If larger, you can cut in half, double the liquid and cook for the same amount of time.

    Yours is the best video because all the other channels say QUICK RELEASE which definitely drys out the cut. Even Martha Stewart’s channel said quick release.     Yes absolutely as long as they fit. I would add in an extra cup of beer or stock and set cook time for the same, but keep in mind it will take longer to come to pressure.

    My instant pot has an extra setting selectable for the Pressure Cook preset that is Less Normal and More, does it matter? I just set it on More and High. Fingers crossed

    Hi Hannah! I would store the corned beef with the cooking liquid and the vegetables in a separate container. Leftover Corned Beef can keep in the refrigerator for up to 3-4 days. For best results, I would put the sliced corned beef and vegetables back in the inner pot and add just 1.5 cups of the cooking liquid, and set to cook for 0 minutes on high pressure. By the time the pressure cooker comes to pressure, everything will be warmed through. Alternatively, heat in the microwave until warmed through.

    Still trying to comprehend cooking times in the Instant Pot. Can you tell me how you came up with 85 min cooking time? I know Instant Pot website and I think even the book says 20-25 min per lb. for large chunks. I've seen this on other recipes before with large chunks of meat, this one is the first I've made and it came out flippin fanastic!

    This recipe I used about 28 minutes per pound for this recipe--and found it to be perfect. (It took me many tries to get the perfect timing!) As for other sites, I don't want to throw anyone under the bus, but I find a lot of the timings out there inaccurate. I test my recipes in 3 different models several times to ensure accurate timing.

    Oh, I am not sure I would recommend that, as the brining seasoning would be super salty. If you want to try it, remove all but 2 ish cups of cooking liquid, turn to saute, and whisk in a cornstarch slurry made with 1 tablespoon cornstarch and 2 tablespoons water. Whisk and simmer units thickened.

    A stout beer adds insane flavor. That said, feel free to use beef broth--that is what my mom does. The pickling ingredients will help to flavor the corned beef :)

    Am I wrong but when you set the time for the corn beef you set the timer on 5 minutes (video shows it at 85 but then you lowered it to 5). Please confirm that it is 85 minutes for the corn beef. The veggies are set at 5 minutes

    It is 85 minutes for corned beef and minutes for vegetables. The camera sometimes doesn't capture the red display well on the unit. I hope you enjoy!

    Your not wrong @ 3:38 - 3:48 she says to set at 85 but the clip shows its setting at 5 min. then the video clip @6:44 - 6:52 is the same clip that's the one that is right, she never showed setting it to 85 she just says to set it to 85 while the clip is showing scrolling down to 5, she messed up the editing, The clips are identical, And sorry Mom its not that the camera doesn't capture the red display sometimes Just saying.

    Hey! As long as your roasts are similar on size, you can cook together. Double the liquid, but keep the cooking time the same.

    Oh my gosh I prepare this four or five times a year and I do chicken and dressing all through the year people wait and have the people wait for a special occasions if you want it cook it but still go with your traditions say if I want a chicken and dress today that's what I'm going to have or if my family should say I'd love to have turkey and dressing and trimmons we're going to have it or how I'm in the trimmons we're going to have it corned beef and cabbage we're going to have it whenever we want and that's how it should be. As a matter of fact I always want to go to the grocery stores I'll look for these big items like the turkeys and the chicken and the corned beef and stuff like that that is off season I put in my freezer you save a lot of money.

    I tried turkey and pork in the instant pot, and they were both dry, so I wasn't sure about corned beef. I was also worried about the veggies, because I have had problems in the past with them being too salty to eat because the meat was so salty, but everything was perfect. I used low sodium chicken broth, but it was still really flavorful. I don't think the meat was flavored any more than usual, but the veggies, especially the cabbage, which can be very bland, were really good. I have not had Guinness in about ten years, and was surprised how horrible the newer draught type is -- it tastes like burnt sugar and water -- but it worked well in the recipe, so I'll use the other cans I have for cooking. Anyway, the corned beef was the most tender I've ever had it and the veggies were delicious. Thanks so much!

    I cooked it to the T but my cabbage was a bit on the soggy side. I took out over half the broth and set it on a bed of carrots and potatoes. I cooked it 5 mins with a quick release after another 5 mins. I removed it immediately but still, it was too soggy for my liking. 😕

    I am sorry this was too soft for you. In the future you can cut the cooking time down by 1 minute or cut the cabbage larger.

And I will be cooking my St. Patrick’s Day dinner a day early but I just can’t wait. Your recipe is very tasty and I love it.     I know I’m probably crazy for skipping out on the beer, but last time I used beer in my cooking (chicken and yellow rice) my boyfriend thought it tasted gross! 😓😂 perhaps just a 1/2 cup of beer will be good for us. Are there any alternatives you would suggest??

    A couple things that my help in the future. Be sure to rinse your brisket before cooking and allow for a natural pressure release for tender meat.

    How much total liquid added...she added 1 cup of beef broth and one cup of Guinness...how can you take out 1 1/2 cups and still have 2 cups liquid...did I miss something?😊

    I couldn’t get my pressure cooker to do 85. It only gives me time.. so is it 85 minutes? I don’t understand why they make so many different models of instant pot. It makes finding recipe is completely difficult.

    I think 5 minutes plus natural release is too long for the veggies. I did mine for 4 minutes and quick release and they were mushy.

    Corned beef and cabbage is not the national dish of Ireland. You would not eat this dish on St. Patrick's Day in Dublin. It is usually only eaten around the religious holiday in the US.Mar 14, 2023

    That is correct. My Irish Grandparents made it every single St. Patrick's Day, just as many do here in US. I think they just adopted the ways here, but it is how I remember the dish being served :)

    This is not and has never been an Irish recipe in Ireland. Corned beef is an ingredient in 'Irish' recipes created in America but it has absolutely nothing to do with traditional Irish recipes. I'm Irish btw. I know!!

    It was created in America by Irish immigrants. Since they couldn’t afford more expensive cuts of meat during that time. This was a staple dish for Irish immigrants during celebrations because it was affordable. So while it isn’t purely Irish(and honestly, who cares if it is or isn’t) it is part of the Irish American culture in the states. But congrats on being Irish!

    I must be going nuts- she said to cook the beef for 85 minutes but then she shows us how she sets the IP to 5 minutes. Do we go by what she says or what she's showing us? To add to the confusion, she tells us to cook the vegetables for 5 minutes. I can't use this recipe because I'm worried about the instructions and ruining a $50 brisket. It's a pass for me ✌️ 🤬🤬🤬🤬

    I am sorry you are confused. The brisket is cooked for 85 minutes, the glare on the screen may make it look like 5, but it is 85 minutes. The vegetables cook for 5 minutes.
