Best corned beef i ever had! Added 1 cup beef stock, 2 cups dark beer and brown sugar instead of regular sugar. Thank you. Happy St Patricks. Choose to be kind and bless you all!

Hi London, I just finished a 4.3 pound flat brisket in my instapot. I cooked it on high for 2 hours and did the veggies with the brisket removed, cooked wrapped in foil for 12 minutes. This was an amazing cook. I think your sugar, vinegar, garlic trick really served to break down the fibers of the meat. I use my instapot a lot I have 3 actually..lol. We live in Florida and this doesn't require my oven. I never had my corned beef turn out this tender and flavorable. Thanks for sharing.

Made it last night and my wife said the Corned Beef was perfect. Sliding time scale on the Corned Beef, ours was 1.75 Lbs so I used 55 minutes and it was great. Yes it does shrink and it is delicious.

For unknown reason we ended up with two Costco beef rounds marinated corned beef this time. Did the first on St Patrick's Day in the slow cooker as usual. Seven hours cooking time. It turned out pretty good if not a little chewy but tasty, served with traditional cabbage, veg, etc. steamed separately with liquid from cooker. But tried this recipe today in pressure cooker. OMG! So delicious so moist, so tender I will never go back. Sliced thin and made Rueben sandwiches, no veg this time. Just awesome! Thanks for the recipe!

I wouldn’t crush the bay leaves. If they’re whole they’re easier to remove. If you ingest part of a bay leaf, it doesn’t digest but remains very sharp and can cut your insides.

One suggestion: add a TBS of whole juniper berries to your "pickling spice" mix, along with the other ingredients you've suggested.
