Easy Instant Pot Corned Beef and Cabbage Recipe

How to Cook Corned Beef and Cabbage in the Instant Pot
Need a simple, easy recipe for cooking a corned beef dinner in your Instant Pot? Well, look no further, because you’ve come to the right place! In this video, we demonstrate an EASY method for cooking corned beef with cabbage, carrots, and potatoes, all in the Instant Pot.
This recipe is truly “no fuss, no muss” -- so much that we even cooked it while traveling in our converted ambulance camper!
FULL RECIPE BELOW
Note: I used a 3-quart Instant Pot, but this recipe will work for a 6-quart or 8-quart Instant Pot as well.
RECIPE
Ingredients:
1 corned beef brisket (size can vary between 2.5 to 3.5 pounds)
1 medium white onion
5-6 cloves garlic
1 pint can of Guinness
2 cups water
1/2 medium-sized green cabbage, cut into 2-inch wedges
1 pound bag of baby carrots
1 pound red bliss potatoes (peel on), quartered
Note: There are many possible substitutions for Guinness, such as a lager, beef broth, chicken broth, etc. Feel free to experiment!
Directions:
Rinse the corned beef thoroughly and pat dry with paper towels. Reserve spice packet for later.
Chop onion into 1-inch slices, and place into Instant Pot.
Peel and gently mash garlic cloves, and place into Instant Pot.
Place corned beef on top of onions and garlic, fatty side down, and sprinkle spices over the top.
Pour Guinness and water over the corned beef.
Place lid on Instant Pot, set to Sealing, and cook on High Pressure (manual) for 85 minutes. Depressurize with a Quick Release.
Remove corned beef, cover with foil, and set aside.
Discard onions, garlic, and all but 1 cup of cooking liquid from the Instant Pot. Leave the 1 cup of reserved liquid in the Instant Pot.
Place baby carrots, then quartered potatoes, and finally the cabbage into the Instant Pot.
Place lid on Instant Pot, set to Sealing, and cook on High Pressure for 3 minutes. Depressurize with a Quick Release.
Slice beef thinly, perpendicular to the grain. Arrange beef and vegetables on a serving plate.
Serve with whole grain mustard.

    I'm an Instant POT newbie (yes, I'm far behind the trends) so I REALLY appreciate this video tutorial. The only criticism I have is, why would you throw the onions & garlic away?! Not only are they TOTALLY awesome flavor to eat along with the brisket, cabbage & potatoes but, if you didn't want to do that, you could always hit them with an emersion blender until as smooth as possible & use them as a base to help flavor a soup...especially a nice potato cheddar soup!

    I'm absolutely in love with them. People are understandably concerned with pressure cookers of the older models but the IP people made pressure cooking incredibly safe. There are more than 10 built-in safety measures in these electric pressure cookers. You'd have to be an idiot to mess it up and blow up your kitchen. Lol.

    I made my son's last birthday cheesecake in the IP. It turned out awesome! Anything that needs a water bath for baking is great for the Instant Pot cooking method. If you need a dry cooking method, it's not so great.

    The corned beef & veggies look delicious!! I am in the habit of cooking mine on the stove but I should try to use my instapot more. Now I know how. I'm in Georgia where cornbread is a staple, so I make the dish with lots of chicken broth and I pull the beef apart with forks and leave it in the liquid and serve the dish as a soup or stew rather than meat with vegetables. We ladle up a bowl full and throw in a big piece of buttermilk cornbread made with freshly ground white corn and kamut grain.

    I have 3 Instant Pot Duo EVO Plus, I have one on reserve and I love this model...I use them at least every other to cook a whole chicken for my service dog, I cook for my girl and season for us...I love having a couple of them going at once...as a matter of facto, I need to go put one on for her right after this😁👍

I could not run that instant pot with 1750 watt inverter, but can run Crock-Pot and rice cooker on solar 🤔☘️🇮🇪😎

    It's a Ford e450 7.3 liter diesel. It gets about 14-15 mpg, which for its weight is pretty darn good.

    Hi Chris! Sorry it took me so long respond. Yes the 3-quart IP with the solar system. We have a 3000 watt inverter but that's probably overkill. I think the IP draws 1000 watts at most.

    We have 3 100AH Battle Born Lithium batteries and 800W of solar on the roof. The instant pot is a pretty low power draw and we have had no problems

    That corned beef looks amazing. One thing I like to add is rutabaga. The chef always has to test the beer to make sure it is good.     The wonderful recipe the space packet isn't enough for me I add a Bible to good heaping tablespoon of pickling space and boy already awake everything up cause some people don't like it that spicy but I had corn beef and restaurants and other places that you can't there's no flavor to it but anyway that's just my recognition but that's a perfect recipe you really can't go around then Godfrey is the potss you're supposed to use regular pressure Coke or prism I can find it in his perfect oh God-bless you thank you for the information

    The difference between flat cut and point mainly is flat cut is less fatty and easier to slice, and point cut is fattier and tastes better. Don't rinse the brine off - It says on the package "We recommend that any juice in this package be used cooking this product." It won't over salt it - it's already as salty as the brine that's why it's brined. NEVER QUICK RELEASE BEEF. It causes the meat fibers to contract and sieze up. Wolfgang Puck said so and he knows stuff.

    Why would you through out onions and garlic. ? That’s part of meal onions. And its a waist. Everyone eats the onions only few who don’t like onions don’t eat them.
