In France with Master Butter Makers - Bordier Butters

For the last few years, I've been fixed on butter. Daniel would say it amounts almost to a craze. With gusto I milk my cow each day, separate off the cream and churn the contents into a golden homespun butter that I lather on everything. Butter is what brought us to France in the first place. Connoisseurs of this all-important agricultural product know the top-shelf variety comes from France. as a farmer entrepreneur who is building our own dairy and bent on providing wold class butter to our customers, of course I had to travel to the motherland to learn with the best. Our visit to Maison Bordier was a flashpoint. A core memory in my quest to the Everest of butter making.
It would be unwise, though very tempting, to say that our butter house needs to be identical to Maison Bordier. This is simply not true. Our needs and business models are polar opposites. We will take what we have learned and add where we can to produce our won Ballerina Farm version of exquisite mountain raised butter. 🧈 🧈 🧈

    I was thinking, while watching your butter-making video, (a) how calm you were as a mother of three girls... and (b) that your butter must taste like French butter coming from field-raised cattle. Of course, I then watched your other video, and it is evident that this is more than a small operation, but then again when you are raising cattle for their meat. The most amazing thing was a comment on one of the episodes of Yellowstone about how the Dunton ranch only got about $1.5 per pound, and that meat sells for a lot more in supermarkets. Your business model is perfect as you sell directly to consumers. Your herds seem small and I suspect that very little grain feed is used and that antibiotics are limited. Finally, I hope that your butter is as good as French butter, probably better since it's from unpasteurized cream. The ice cream you make must be divine! I also later discovered that you are even calmer than that since you also have a bunch of boys...good for you. Please don't let the criticism from KZread get to you! If I get that right not only are you providing good-paying jobs in a remote part of the US but are also encouraging small businesses (the soap lady...). Although I live in Canada (you cannot export to Canada) I am impressed by your entrepreneurship and your drive.

    Una forma bonita de vivir tener una familia sólida, con un hombre apoyado y hartos hijos. Así se vive mejor en un ambiente sin contaminación , todo es saludable. Yo viví eso con mis padres pero es muy sacrificado , la semana para los granjero es de 7 días y no hay descanso. Los animales piden su comida como ellos saben hacerlo. Me admira mucho como crías niños autosufientes y pocas veces a los más grandes los tomas en brazos, si un niño quiere subirse a la mesa ponga una silla. Comen comida sana y todos Uds. son saludables y sanos

    J'achète et je mange du beurre de chez Bordier à St Malo depuis 50 ans. Mon père et ma grand-mère avant moi. En Bretagne il y a aussi beaucoup de petites fermes qui fabriquent un peu de beurre pour le vendre au marché. En Breton nous avons un dicton: "Du pain, du beurre et un couteau pour manger avec"

    Their salted butter is amazing as well as with raspberry or yuzu, it has even buckwheat taste! Bodier has a lovely shop in St. Malo in Brittany ❤🇫🇷 It’s a bit hard to find this butter in a usual shop in Paris, but you will definitely find it in Galerie Lafayette :)

    ​@@ClaraSunshine, il est fabriqué avec des crèmes ensemencées particulières. Salé, très onctueux, mais il ne se conserve pas longtemps. Bordier en fabrique également aux algues, au yuzu, au sarrasin.

    ​@@ClaraSunshine vous devez bien avoir quelques petits agriculteurs bio qui en fabriquent d'excellents. Il faut juste les trouver... J'ai la chance d'habiter la Bretagne où le beurre est la base de notre alimentation, sur le petit marché de mon village nous en avons d'excellents mais ils contiennent davantage d'eau que les beurres industriels, et donc ne se conservent pas plus d'1 semaine.

    Для не просвященных, объясните, чем именно это масло отличается от других, чем именно оно лучше? И я знаю, что во всех маслах добавляют кератин - натуральный краситель. И чем это масло лучше домашнего? В любом случае, любой сливочный продукт зависит от коровы, чем она питается и где она ест. Я лично не доверяю всем производителям, даже если почему то его называют "самым лучшим". Тем более на заводе без перчаток и на дереве. Санитарные нормы видимо не соблюдаются

    Franchement ils devaient mettre des gants et protection avant bras. Ils ne sont pas chez eux mais c'est un produit de collectivité. Quand ils brassent le beurre on a pas besoin que des mains et avant bras soit dans le beurre que des gens vont consommer. Dans certaines cantines ils donnent aux cuisiniers des gants et des protections pour les avant bras question d'hygiène. Je ne vois pas pourquoi ça doit être différent pour fabriquer du beurre.

    My guess, and I may be wrong, he uses the warmth of his thumb to cut the butter to put it back on for needing. Or do you mean Hannah’s hands? Likely, besides being obviously clean to an inch of their life, they are only folding a few, and taking them as souvenirs… Again, just a guess.

    It definetly depends on where you want to live how much a farm or land on the countryside will cost, i certenly dont believe you have to be a billionaire to create a homestead, if you want to do it, do the reasearch and see for yourself hiw much it could cost, and you dont have to staet with everyhing from the beginning, but instead build up over time

    Donc la ballerine ne porte jamais de gants mais c'est normal De plus, j'ai regardé plusieurs fois la vidéo et les bras de l'homme sont ÉPILÉS Par contre,au lieu de voir la maîtrise et le savoir faire de cet homme qui créé le beurre vous êtes obsédés par le fait qu'il ne porte pas de gants de caoutchouc dégoûtants qui ont une odeur de plastique et qui ne permettent pas de sentir la juste consistance du beurre Vous êtes tellement éloignés de l'humain ! Pétrissez vous le pain avec des gants en plastique ? C'est cela qui est dégoûtant ! Quand à la quantité de sel, une fois pétri, le beurre est juste comme il faut, un petit peu salé, c'est le conservateur qu'utilisaient et qu'utilisent toujours les fabricants de beurre et non pas de conservateurs chimiques. Il existe bien sûr du beurre sans sel grâce à la conservation des réfrigérateurs mais la tradition en Bretagne est au beurre salé particulièrement pour les crêpes Quand aux italiens allez voir si ils mettent des gants pour étaler la pâte à pizza en la lançant en l'air !
