Here is something I have ran into with my Kadet - How do you keep a blade centered if it doesn't have any flats (say, a Japanese Gyuto Chef knife) ?? Sometimes when the blades are just angled all the way back to the spine, when I clamp the blade down, one side seems to be angled further than the other. In other words if I try to sharpen the knife, one side will have a different angle than the other side. Because clamping the blade without flats doesn't give you a precise clamp down on the knife. Do you know any way to correct this? Thanks))

Having the exact same situation arise here...you ever find an answer?

@@secretagb No one ever gave me an answer. I think there is no way to keep it centered. I have some Japanese kitchen knives that I sharpened. I just had to get it centered the best I could. I think that's one Achilles' heel of this system. Still a great system for other knives.

It is possible but we prefer two for stability.

All these clamp type systems work ok but the real issue is that virtually all of the clamps and fixtures flex whenever used for the purpose they were designed for. Simply beef up the design and they all would work extremely. I built my own from 8020 10S extruded aluminum, $90 all parts (not including stones or diamond stones) and will last a lifetime.

That was one of my main concerns when purchasing a guided system. I have to bear down on this one quite a bit more than I would when I sharpen, to get it to flex.

That sounds great. Any way you could post a parts list? Where to get them. I Like these systems. But hundreds and hundreds of dollars seems a bit much... Like other's that are " wickedly " overpriced! I really would appreciate it if you get a chance. Thanks!

This system wont flex at all. If it does, you are using too much pressure to sharpen ..
