How to make tteokbokki (Korean spicy rice cakes)
This highly popular Korean street food is so easy to make at home! This recipe is a simple, classic version I grew up eating. You can simply use water to make tteokbokki, but flavorful broth makes it even more delicious! These spicy, slightly sweet, and chewy rice cakes are simply addictive!

Ingredients:
1 pound rice cakes
8 to 10 medium to large dried anchovies
A small piece of dasima (dried kelp) - about 3-inch square
1/4 onion
1/4 cabbage core, if available
2 sheets eomuk (fish cake)
4 ounces green cabbage
1 or 2 scallions
1 tablespoon minced garlic
2 boiled eggs - optional
1 tablespoon soy sauce
2 tablespoons sugar
3 tablespoons of gochujang (Korean red chili pepper paste)
1 tablespoon oligo syrup (or corn syrup or rice syrup)
1 tablespoon gochugaru (Korean red chili pepper flakes) - adjust to taste

I am a huge fan of Korean food and have been so happy to come across this blog online. The video helps! I have to say this is just like the tteokbokki I remember from my university days. Where I live now I can’t find a vegan restaurant version and really appreciate the vegan options here.

Thank you! Tteokbokki is my favorite korean dish but I have never made it at home. I followed the recipe except I used dashi powder instead of making real dashi broth. It turned out amazing.

thank you for the recipe! i was wondering if i can add noodles, if i can, when should i add them?

Yes you can! Noodles will soak up the broth so use more water or broth if you plan on adding noodles. When you should add noodles will depend on what type of noodle you're adding. In general, add them at the end giving sufficient for the noodles to cook. I have a tteokbokki recipe with ramen noodles on my website you can check out for more info. Look for the heat level indicated on the label. Some brands noted it in English.

They dont have heat level on the back. Any brand would you recommend for regular gochigaru and gochujang?

Since her recipe calls for 3 Tbsp Gochujang, why not try adding 1 Tbsp first? Stir well to mix and do a taste test. Continue to add 1 teaspoonful at a time, mixing well and tasting it until you are comfortable with the level of spiciness. Do take note of how much Gochujang you have added so it will be easier when you remake it in future. Happy cooking!

Korean grocery stores usually carry either frozen or refrigerated. Ask someone who works at the store. Hope you can find it. If not, I'm sure you can find how to make rice cakes from scratch on line.
