I've been in charge of cooking rice in the family for more than 20 years that I don't even use the finger method anymore to measure water. I just put water until the spirit of my ancestors pat me and said "that's about right, child."

How exactly do you know when it's boiling? I can't tell from the steam on the lid without lifting it. My first try a layer of rice stuck to the bottom and burned a little. Is it because I didn't wash the rice because I couldn't be bothered or I lost the boil at some point? I lifted it a little at the start to see if it was boiling. I even shook the pot a few times to move the rice (took it off the heat) but at about the fifth minute it wouldn't move

Today its mother's day, and i decided to make rice for the first time. I cook a lot, but i have never made rice before. I make rice Gordon Ramsay style, with shrimps, onions, carrots and some red pepers. My mom literally cried after the first bite, she was astonished, and i was really freaking happy and grateful. Thank you Gordon, you are definately an inspiration to me. Greetings from Chile, and again, thank you.

13jeac it isn't hard mate... First I make the rice. The most important thing it's put the rice under water and clean it for a couple of minutes (use one of that recipient with holes, I'm not English native speaker). Then you need to boil water. Two cups of water for one cup of rice. After boiling, put rice with salt and pepper and let it cook with low fire and a toaster (for kitchen) for twenty minutes. So, fire, toaster, rice. For the sauce just cook the shrimps or any meat you want for a couple of minutes, then add vegetables, any one you like. Pepper's, onion, garlic, etc. After everything is cooked add salt, pepper, and any other seasoning you like. Try to make the plate look beautiful for you mom and good luck!

Gordon: Now most people, when they boil water think....boiling water. WROONG! You wanna flavor it up. Otherwise its just too plain. First, take 2 cups of water into your pot, and you're gonna wanna squeeze the juice of HALF a lemon into it. And let the seeds sit in there. You're gonna take those out when you're through. For now let them simmer. Next we add a bit of Okra. But its important that you slice and shave it. So its not so slimey in the end result. Some people like the texture. And in certain dishes its quite good. But for boiling water. Its a bit much. Now what you're gonna do after letting your pot reach boiling point is you're gonna scoop out those seeds. But don't throw em away. You're gonna wanna take em while they're still nice and hot, and shove em firmly up your nose, ears, and arsehole. You want EVERY ORFICE FILLED. No holes left besides your mouth. You're gonna eat those later. And once you're fully engulfed by the odorous stench of your own burnt bum getting past your clogged up nostrils, the water is ready. You're gonna take that pot, and turn it....riiight over your own fuckin head cus I'm the cook, what I say goes. And you're a bleeding lil cocksucker who deserves this. And that my friends. Is how you boil a bastard.

Okay I'm sure this would work, great job. But you know what would be simpler? Just put the rice (pre soaked if possible) in a LOT of water and keep boiling and tasting. Once the texture is right, just strain it. Like pasta. It really shouldn't be difficult at all. People in the US always make such a big deal about getting the measurements right when making rice, but we never really do it in India. It's all about tasting as you go and you develop a rough time frame with practice.

Just put the rice in a pot, wash, put enough water, put it on the stove medium to high heat, let it boil, when it's boiling, lower the heat and wait for the water to be absorbed completely, let it rest on a very low heat for 3-5 more minutes, and that's it!

To cook it perfectly, let it boil until there are bubbles foaming out, open it and mix the rice for like 3 sec. After that, close the lid, slow cook it for 5 minutes, turn the cooker off, wait for 5-10 minutes and eat it with adobo 😋

    1. What you made chef, is not plain steamed rice, but in fact Masala Rice/ Pulao. Add a little Cumin and /or Peas and it will be proper Pulao. 2. Rice has to be smooth enough even for a GERD/LPR patient. This is not. Due to the spices. 3. The ratio is 1:2 not 1: 1.5 for absorbtion method and 1:5 for draining method. 4. The rice you made were still gloopy and not 'Blooming'. They will stick/clump up as soon as they dry. A dash of oil may be advisable to prevent that, though it's optional.

It adds water. 1:1 isn't enough on its own. Also, traditionally the water ratio changed with the season. The rice would dry in the months after harvest requiring more water. I've been making rice for years. Don't wash rice. Use a little less than 2:1 water. Bring to boil. Reduce heat. Steam for 18 minutes with lid on. (Don't lift lid.) Rise is done. The reason to not wash the rice is that the rice company sprinkles the rice with vitamins. Washing washes off the vitamins. Of course the rice turns out gloopy. But I like gloopy rice. Sorry, but that is badly cooked rice. It is too wet. I kinda agree with the cardamon and star anise, but I disagree with the amount of water. If you don't have an Uncle Roger rice cooker, then go for 1.1 water to 1 rice and use a diffuser under the pan and seal the lid of the pan with some foil. For absolutely perfect rice with separate grains, spread it out on an oven sheet and give it a gentle dry in an oven. This may be a step too far for most people.

I was taught to measure rice and water for 1:1, I was never told that you can measure with finger. (I am asian) To explain it in detail. In the BBC food show (they seems to have taken it off from KZread already), they boil rice with 2 times the water which is too much and after cooking they proceed to use a colander to dry the rice and then rinse it with water because they haven't do it in before cooking the rice.

He only says to bring it to a boil then to simmer. Doesn't he let it rest after letting it simmer? I think he forgot about it or maybe he skipped this step. It's important to just add the cold water and afterwards to add salt (if you want pepper or whatever spice you want, you can add it, just put it before cooking it). 🙂 Very nice looking rice. Add stock (chicken stock or even better beef stock or maybe mix it with water) and a bit of butter and it will be so tasty. 🙂
